(Not so) Natural Red Velvet Swiss Roll cake


And my today post is Red Velvet Roll Cake. I use beets puree for give natural red color but with a little "cheating" (^,^)... I also add few drop red gel food color. It's because I saw my batter before baking it was not as red as I hope. Maybe for next experiment, I will increase amount of beets puree for this recipe.

I know many people love Roll Cake aka swiss roll....and I guess not a few of us either got struggled to make it one perfectly. 
Some end up with crack during rolling it--that's common problem on making roll cake. I know.. I've been there before..or even until now sometimes I have that problem.

But I never give up on things...no no no..not me! (^,^) . I kept learning, trial and error on some recipe and technique so I can determine what kind factors which make sad face on us when making this unique delicacy dessert. I am not an expert person who can tell you what to do or not to do to make roll cake perfect. And I'm not guarantee either after you read my review you will 100% success making it... I just share according my last trial and error making this roll cake.. So if you have something on your mind...speak out to me..I'll be very happy and thankful.

The recipe in my humble opinion is one important key to make perfect roll cake. Most roll cake recipe require less flour than liquid (from eggs, oil/ melted butter, etc) to make it flexible enough to handle.... But again..I'm not expert in this field. You may do trial and error also on some different recipes.

Red Velvet "Yogurt Cheese" Swirl Brownies for #nccbrowniesweek

I looovvveeee brownies ( who doesn't?) ... and more even I love red velvet.... I don't know, I kinda admire those red velvet color on my dessert... so pretty and yet appetites .. Don't you thing so?

And my post today is Red Velvet Brownies with Cheese Swirl. Beside my craze about Red Velvet...I made this brownies also to join and celebrate "Natural Cooking Club (NCC) Brownies Week"

A little about NCC Indonesia, it's a club and forum for all culinary lovers. The group mainly in Indonesian language, but if you want to join, it also open for you with English language. I heard about this group from long time ago before I dare to join it lately. 

They have many great culinary events which dare your baking and cooking addict become more fun. And this month they have Brownies Week event that I eagerly join to ^,^

Now, let's talk about my red velvet brownies. For the brownies recipe I adapted from here and for the swirl cheese I use my homemade "yogurt cheese" and make a little modification. To have "yogurt cheese" you can drain/ strain one or two cups of thick yogurt a day before (or at least over night). You can check my other post using this yogurt cheese in my previous post: Yogurt Cheese souffle, Yogurt Cheesecake, Three tone yogurt "cheese" Chocolate mousse... and wait..I'll have more experiment with this healthy "cheese" ^,^

Note: For bigger batch of this yogurt cheese you need to drain plain thick yogurt to separate the water (whey) in cheesecloth-lined strainer for at least 24 hours before. From 1 kg yogurt I get about 860 ~ 900 gr drained yogurt 'Cheese' (it depends the thickness of yogurt you use)

Garlic Butter Pizza Bread Stick

Happy Saturday. May you have a great weekend with your family and everybody you love. 

Since having a growing child in our house, I start a little bit busy making "schedule" to provide her snack or food start from breakfast till dinner. I think you are too when you have one like me :)

I never want my kid to eat any store bought snack-- try not too much though. That's why I regularly make something for her. Some food which I can make a head and can be stored in freezer. I think making our own snack (food) is more healthy-- that's my 1st concern about food for my kid. And other reason is maybe more economical in budget :)

Well, talking about snack today I want to share one of our fave one. It's surprisingly become new favorite in our house, not only by my kid, but also for her baba :)
Try it, maybe it'll become most request also in your house :)

You can use any pizza dough recipe you have--or you can browse my other pizza dough recipe in Basic dough label. Or you can use recipe below..it's just incredibly easy and fun for cooking project with your little one too. :) 


Make about 23 sticks

Ingredients:
For Basic Pizza Dough:
  • 1 cup warm milk (or water)
  • 1 tsp instant yeast
  • 1 Tbsp glucose / honey / sugar ( I use honey)
  • 340 gr all purpose flour 
  • 1 tsp table salt
  • 1 Tbsp olive oil other vegetable oil

For topping:
  • 3 cloves of Garlic. finely grated/ chopped
  • 100 gr salted butter, room temperature. (if you use unsalted butter, add pinch of salt, or no need more salt if you have strong salty cheese)
  • 2 tsp sweet paprika powder 
  • 1 Tbsp dried thyme
  • 1 Tbsp dried basil

>>Mix all until well blended. Divide it into 2 equal parts. Set a side

Cheesecake between Red Velvet Cake for our wedding anniversary

This is not too late post--I think. Yes, me and my husband just celebrate our wedding anniversary. At this 28th August we celebrate our 5th year, love and respect each other, live and rowing our small boat facing-sometimes ripple waves- and sometimes big waves and scary wind. I know it's still too much too young to reach our dreaming island...but at least this 5th year we can remember that we are still rowing same boat to go to the same way.

Nothing is easy in our marriage. We came from different place! Totally different culture, different language, different nationality, different taste... My husband is Turkish and me my self is Indonesian.  If you understand what I mean, person who came from different background is never easy to walk together with at same rhythm... 
The things we have in common is only care, love and good willing to reach blessing of Allah.

 I  knew my husband around 2004 ... We knew each other from Internet. It took us so much time to finally decided to be together in holy marriage. Many things had to think about and calculated.... But hey... love is not a math that we can calculate😍 
I'm not exactly remember why we decided (finally) to marry .... after my first visit to Turkey in 2008, one year after that I married my husband 😃



Well, enough about old story of us.. I'll tell you many thing again later... We just want to grateful to Allah that we are still now having each other with great love from HIM.
So for just remembering our 5th year of marriage, I made this cake. I know my husband likes cheesecake a lot s much s he likes chocolate cake... so I decided to make this Red velvet cake with cheesecake in between. For garnish, I use classic vanilla butter cream flowered with small red fondant flower (I have small amount of -don't know what to do-fondant in my refrig).

In Turkey, pita (called pide) has a soft, chewy texture. The pizza-like foods called lahmacun are made with oval-shaped pieces of pide dough topped with finely chopped meat and herbs before baking. Pide also refers to another pizza-like food made of pide dough topped with different ingredients. Regional variations in the shape, baking technique, and topped materials create distinctive styles for each region. Such pides can include chicken, beef, cheese, potatoes, garlic and many other ingredients. Beside Pide with meat toppingchicken toppingTurkish sausage topping, this time I made it with cheese and egg  topping. Also you can choose ayran for drink.


Serve: 8 pieces medium size

Labneh (strained Yogurt) Cheesecake

I was happy with my previous experiment using "cheese" from drained yogurt. I made a delish "cheese" souffle that now become 'most request' in my family ^,^

To make this Cheesecake, you need to drain plain thick yogurt to separate the water in cheesecloth-lined strainer for at least 24 hours before. From 1 kg yogurt I get about 860 ~ 900 gr drained yogurt 'Cheese' (it depends the thickness of yogurt you use)

If you using electric oven which has two side heat source (up and down heat source) be careful not to burn the surface-like I did here-to perform more beautiful good looking cheesecake. Recognize your oven to produce correct heat (even your oven has temperature setting). You might need to cover lightly your cheesecake with aluminium foil when you notice it's going to burn much.

But even my cheesecake surface is slightly burnt, it doesn't affect the silky and delish taste of this everybody's favorite dessert. With various jam topping, you and family can enjoy each personal taste. 

Maybe you would think that cheesecake made of yogurt has too much sourness taste in result...well...One thing I can say that each yogurt product has different quality and sourness. In Turkey we have few kind of yogurt for example; kaymaklı or kaymaksız. Kaymaklı is more creamy and less sourness than kaymaksız. And mostly turkish yogurt are very thick compare yogurt products I found in Indonesia which mostly thinner.
But again... it's back to your personal palate and taste.

Kaastengel Cookies II / Cheesy cookies

One of Classic Indonesian cookies. People said it's one of Dutch's heritage recipe beside some other Indonesian classic food.
It's my second Kaastengels recipe. You can use either first recipe or this recipe, both will give you nice and perfect Cheesy cookies for your tea time with family.

Kastengel or kue keju is Dutch-Indonesian cheese cookie in the form of stick, commonly found in the Netherlands and Indonesia. The name describe its ingredients, shape and origin; kaas is Dutch word for "cheese", while stengels is also Dutch word for "stick". Unlike most cookies, kaasstengels taste savoury and salty instead of sweet.


Ingredients: 
  • 250 gr butter, soften at room temperature
  • 2 egg yolks
  • 1 teaspoon fine salt
  • 2 ¾ cup (350 g) AP flour
  • 2 tablespoons cornstarch
  • 2 tablespoons powdered milk
  • ¾ cup (100 g) grated cheddar cheese/ edam cheese

Strawberry Blackberry Pie dessert and award

Nothing more I can say about this fave dessert. Combination of the crunchy pie as a base and creamy yummy cheese cream, topping with fresh fruits which covered by yummy jam... Hmmm.. who's gonna refuse this??



İngredients for 9 inch Pie Crust:
 1 ¼ cup flour
 2 tbsp caster sugar
 115 grams butter, cut into cubes and store in refrigerator until ready to use
 5 ~ 6 tablespoons ice water
 ¼ tsp fine salt
For the Filling:
 ¾ cup cream cheese
 ½ cup powdered sugar
 1/3 cup heavy cream
Topping:
 3 tablespoons strawberry/ blackberries jam
 2 tablespoons cherry liquor
 ½ tbsp gelatin, dissolved in 2 tablespoons water
 Strawberry and fresh blackberries (or fresh fruit to your taste)


Method:
>> Pie Crust:
In a food processor, put flour, salt and sugar. Gradually mix in cold butter, pulse a few times, mix in cold water and pulse to resamble (crumble). Pour into the work table, gather the dough and fist forms a ball, wrap plastic wrap and refrigerate for a few moments ± 45 minutes
Pre heat oven at 190 ⁰ C. Sprinkle your work desk with a little flour, roll dough crust wider than your pie mold. Moving into your pie mold, bake until cooked ± 25 minutes
>> Filling and topping:
Combine cream cheese, powdered sugar and heavy cream, mix until smooth and well blended, set aside in the refrigerator.
Mix the strawberry jam / blackberries with cherry liquid. Heat the gelatin by double boil until gelatin dissolves, mix in liquor mixture, stir well. Remove from heat, let it slightly cool at room temperature, mix in Fruits (strawberries and Blackberries), stir them carefully to cover them with that liquor-jam mixture
>> finishing:
Pour the cream filling over the pie crust and smooth the surface. Arrange the fresh fruit.
Store in refrigerator before serving.

Gözleme

Gözleme is a savoury traditional Turkish hand made and hand rolled pastry. Fresh pastry is rolled out, filled and sealed, then cooked over a griddle. The name derives from the Turkish word göz meaning eye. Traditionally, this is done on a sac.

Gözleme varieties include:

Japanesse style CheeseCake with Lemon Candied Topping

Who doesn't like cheese cake? I'm one of you... Fan of it. And if you follow my blog you will notice that mostly my family dessert are cheesecake! 
After tried many kind of cheesecake, today I make different kind from my previous post, it's Japanesse style cheese cake.. try it also in your kitchen and you will find out the different between new york style cheese cake @(^,^)@



Ingredients:
- 200 g cream cheese at room temperature.
- 80 ml ​​whipped cream
- 50 g unsalted butter, plus for greasing pan.
- ⅓ cup all purpose flour
- ⅓ cup cornstarch
- Lemon Zest of 1 large lemon
- 2 tsp lemon juice
- ¼ tsp fine salt
- ½ cup caster sugar
- 4 large eggs. Separate yellow from white

TIRAMISU CHEESECAKE



This is really great combination for Cheese cake lover and Tiramisu lover ... Cheesecake with tiramisu flavor. It's even surprising me how wonderful this dessert being in our family dessert table.. Everybody love it!

For an 8 "springform pan

Ingredients:

  • 150 gr lady finger (about 16 large biscuit)
  • 25 gr butter. Melted. Plus for greasing pan.
  • 1 tablespoon strong instant coffee. Dissolve with 3 tablespoons hot water, set aside.
  • 500 g cream cheese. Room temperature.
  • 1 cup caster sugar.
  • 1 whole large egg, at room temperature.
  • 1 tbsp plain flour
  • 1 tablespoon cornstarch.
For the topping:
  • Chocolate cream frosting ready mix
  • Shaved semi sweet cooking chocolate.

Method:

1) Rub  8 "(± 20 cm in diameter) springform pan evenly. Cover bottom of the pan with parchment paper. Preheat oven to 175 ⁰C, place one pan fill with water on bottom rack of oven. Prepare another rack in center of oven to put cheese cake later.

2) Crush lady finger with food processor, pour melted butter and 2 tablespoons coffee solution alternately, pulse until they just combine well. Press the crumbs at the bottom of springform pan, set aside in refrigerator.

3) In a large bowl, combine cream cheese and caster sugar, beating well until smooth, mix in remaining 1 tablespoon coffee solution and eggs, beat until blended. Turn off mixer.

4) Mix in flour and cornstarch, Use manual whisker stir until blended and no lumps. Pour into prepared pan. Place on middle rack of the oven and bake for 45 ~ 50 minutes until center is set. Slightly open the oven door and turn off the heat. Let the cheese cake cool in oven about 30 minutes before removed from the oven. Chill before decorated with toppings. Here I use ready-mix chocolate cream smeared on the surface of my cheese cake then sprinkle with shaved semi sweet chocolate. Chill in refrigerator before serving minimum 2 hours.

Sigara börek.. (Fried Pastry with feta cheese)

This Fried Pastry, I guarantee you'll gonna love it ! It's easy and quick to make, light meal in any occasion. With hot tea or coffee as side dish I think you will have great time with it.

Ingredients and how to make:
 Several sheets of phyllo dough.
 Crumble Feta cheese.
 Dill or parsley, finely chopped.
 Enough Oil for frying.

Mix feta cheese with chopped dill or celery. If you use plain feta cheese, you can add salt if you like. Set aside.
Prepare the phyllo dough, cut lengthwise (about 10 x 15 cm). If you use round shape phyllo dough (like I did) you can cut it like the illustration below. Cut phyllo dough right in the middle into 2half-circle, then cut into 8 pieces.

Take one sheet of phylo pieces, place feta cheese mixture on the edge of phyllo (wider side-if you use round shape one), fold and roll it to form cigarette like. Heat enough oil, fry till golden red. Serve warm as snack complementary tea or coffee. You Can also serve them as your breakfast menu.

Cheese Pound Cake with Lemon Glazed


Beside chocolate, I love cheese in anyway, moreover if it's combined with lemon... hmm..imagine how yummy it will be....  @(^_^)@ 
Just Like I made this time, it's cream cheese pound cake with lemon glazed.....And this evening I eat it with my warm lemon tea... wow, it's just perfect . Try one and tell me if you agree with me d(^_^)b 


Ingredients:
make 10 " bundt pan. 
For cheese pound cake: 
- 200 g cream cheese, room temperature. 
- 325 g unsalted butter, room temperature. 
- 2 ½ cup granulated sugar.
- 1 teaspoon salt. 
- 3 cups flour.
 - 1 package (5 g vanilla powder) or you can use vanilla extract.
- 6 eggs, room temperature. 
- 1 teaspoon baking powder 
- 1 teaspoon baking soda 
- Lemon Zest from 1 medium lemon.

Peynirli Mayalı Poğaça



Pogačice (diminutive of pogača) is a type of puff pastry. 
PogačaPoğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten inBosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries),Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is calledpogatschen in Austria. Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.

If you are looking for something for your breakfast or brunch, or maybe for Kid's lunch box, you should try this one.  I guarantee It is repeatable menu for that...


Ingredients:
Ingredients A:
 3 tablespoons all purpose flour
 1 cup warm milk
 1 package (10 grams) dry yeast
 3 tablespoons granulated sugar
Ingredients B:
 3 cups all purpose flour (plus a few tablespoons if necessary)
 ½ cup plain yogurt
 1 teaspoon salt
 1 egg, lightly beaten.
 ½ cup olive oil
Ingredients C (for topping):
 1 egg yolk, beaten with 1 tbsp water and 1 tablespoon olive oil (vegetable oil).
 enough black sesame and white sesame.
Stuffing ingredient:
Enough Feta cheese.


Method: 
1) In large bowl, combine and mix all ingredients A as the starter. Cover with towel and let stand in warm place until fluffy (I need ± 30 minutes) 
2) Whisk eggs with yogurt and olive oil until blended. Add 3 cup of flour and egg mixture into ingredients A (fluffy starter) and knead until smooth and soft. If you feel the dough is too wet, add flour a spoonful after spoonful while continue to knead until smooth and not sticky at your fingers. Cover with plastic wrap or towel and let stand a warm place until dough doubles (I need time ± 50 minutes) 
3) Flat the dough for remove the air and divide into 13 ~ 15 small balls. Fill with stuffing ingredient and round shape them. Cover with towel and rest again about 30 minutes. 
4) preheat oven to 180 º C. Place dough on baking sheet coated with baking paper or grease with margarine. Smear top each ball with egg yolk mixture and sprinkle with sesame. Bake 15 ~ 20 minutes or until golden color. 



::Note
 Rocognize your own oven's condition is recommended. Different size and condition gives 
different heat result.

Bidaran Keju (Indonesian fried cheesy snack)

I was looking for something light and salty cheesy snack to accompany my afternoon tea. I don't know, it's like a habit for me, I can not drink tea or coffee without something beside it d(^_^)b ... 
I like something cheesy and salty, like this one. My fave when I was in Indonesia ...

materials:
- 2 cups tapioca flour
- 2 large whole eggs
- 1 cup grated Edam cheese (or cheddar cheese)
- 1 teaspoon salt
- Vegetable oil for frying
Method:
1) In medium bowl, whisk egg and salt. Add tapioca flour and mix well using your clean hand until all tapioca wet. Mix in grated cheese, mix (knead) until incorporated (picture 1).
2) Take small amount of dough (smaller than marbles.) and twist like figure 2.
3) Then put in a cold frying oil. Arrange so they are not overlapping one another-see Figure 3. 
After full one pan, heat that pan over medium fire. Do not stir first before they floats and slightly hard. Fry until golden red. Do same way until all dough finish.
Drain well on paper towel before store them in air tight jar.

Enjoy with your evening tea and coffee.
