Indonesian Honeycomb Caramel Cake / Bolu Sarang Semut (cake karamel)



Selam everybody..Merhaba from Turkey....



Sarang semut mean ants nest in Indonesian or others call this bolu karamel (caramel cake). I think you already get idea why it calls "ants nest" :)

Before  put into the oven, I let the batter about 3 hours so "the crater nest" or honeycomb will perfectly formed. 

And beware cause this cake is kinda addictive cake. Once you eat it, you gonna love it and you will make it more and more.... ^,^ real story!


Indonesian Honeycomb Caramel Cake / Bolu Sarang Semut (cake karamel)

Making this actually really simple. But for some people might be a bit tricky especially making caramel correctly and not burning it. So for you who already make caramel-like dozen times, I think it wouldn't be a problem for you.

Sorry for this post I didn't put step by step photo cause I'm kinda bit busy doing something else while making this cake. Maybe next time I'll add some step by step picture to guide you more clear. Meanwhile bookmarked this recipe cause you gonna love this cake!

Happy Sunday Everybody. 

Weekend for me is busy time.... well..as busy as week days actually (^,^).. But in week end I always spend more times to makes additional snacks for the family-- especially for my little one. For some kind of snack which can be frozen (make a head) I usually stock up a bit much so any time my Sahnaz wants a snack it can be ready in a minute ..just heat it in oven or just fry it.

This time I make tuna croquettes. I  mixed my croquettes with carrots for more healthy reason . But If  you want to make it and skip it .. go ahead .. but I prefer snack for my kid ..anything..with vegetables. 
You can make it in advance and store in freezer. Use within 1 week. 


Make about 20 pcs 

Ingredients:
- about 500 gr potato (peel and wash)
- 2 medium carrot
- 2 spring onion, chopped coarsely 
- Canned tuna 160 ~ 180 g (strain the oil )
- ± 40 g  butter or margarine (I use butter) 
- 2 tablespoons flour 
- 1/2 cup (120 ml)  milk
- 1 small onion. finely chopped 
- 3 cloves of garlic. finely chopped 
- Pepper powder to taste 
- Sugar and salt to taste

Oliebollen recipe (Dutch Donuts)

Oliebollen is a fried food-similiar to donut flavor containing raisins and apple slices, originally from Dutch. Oliebollen also known in Indonesia and are often listed in an old book recipe cause it's very popular also in Indonesia as one of Dutch food's heritage . In Netherlands, this food is traditionally eaten on New Year's Eve (But I love them in my breakfast with my hot Tukish tea). 

Oliebollen made ​​by frying dough in hot oil until lightly browned. Dough made ​​from flour, eggs, yeast, salt, and milk. The dough is left for about 1 hour and fried, then dusted with powdered sugar.

Oliebollen recipe (Dutch Donuts) | Çitra's Home Diary

Makes ± 35 ~ 40 small balls

Ingredients:
 500 g all-purpose flour
 2 medium egg, lightly beaten
 200 ml (1 cup) warm milk
 200 ml (1 cup) warm water
 11 g (1 packet) instant yeast
 50 g (± 2 tbsp) 
+ 1 tsp granulated sugar 
 1 tsp salt
 1 tsp vanilla powder
 2 pieces (± 250 g) medium apples, peeled, cut into 1x1 cm cubes, drizzle with lemon juice
 75 g (± ¾ cup raisins), soak in warm water a few hours earlier, drained
 50 ounces dried apricots (optional), chopped coarse
 Icing sugar for dusting
 Cooking oil for deep fry

Indonesian glutinous rice balls in herb caramel syrup / Wedang Ronde Karamel

This February the weather showed no signs of warming, still snowing almost every day. Temperature is still around zero sometimes even minus zero. Even worse in eastern Turkey temperature average minus 15 degrees. I saw on news, some cities in Europe even got worse condition, temperatures can reach minus 30 deg. I don't understand why the weather can deteriorate like this. I remember the first snow fell last November 2011 - that was very early according to my husband.

Anyway, I just try to enjoy any weather or conditions, because I believe God has set everything up. And this glutinous rice ball in herb caramel sauce is also one of my way to enjoy this freezing weather while waiting for the sun really warms my heart and soul... @(^_^)@



Serve 4 ~ 6
Glutinous rice ball ingredients:

 2 cup (± 200 g) glutinous rice flour
 2 tablespoons rice flour
 1 tbsp caster sugar
 ¾ cup warm water
 green and red food color

Onde-Onde #Pandan / Indonesian glutinous dumpling Snack with pandan flavor


Onde-Onde, it's a round ball-like dumpling usually stuffed with mashed mung bean. One of Indonesian traditional snack during family tea time in the afternoon together with another traditional snack. Now days there are many other kind stuffing variety such as black bean, chocolate, cheese and other. But traditional version always come with mashed mung bean- my favorite one.
Other variation is on the skin dough like I made this time. I add Pandan flavor in it. But if you like plain one, you can check my other post here

Filling ingredients:
• ¾ cup mung beans (you can use peeled one). soak overnight
• 3 tablespoons granulated sugar
• 1 teaspoon vanilla powder
• Pinch of salt
Steam mung beans until tender. once it soft, while it's hot puree/ mash with hand blender or food processor together with sugar, vanilla and salt. Let stand to room temperature. Then shape it round of a marble. Set a side.



Ingredients for skin dough:
• 1 ½ cups glutinous flour
• 2 tbsp rice flour
• 1 tablespoon granulated sugar
• Pinch of salt
• A few drops of pandan paste
• A few drops of green food coloring (optional)
• ¾ cup water room temperature

Dutch Bitterballen recipe



Do you know that the Netherlands has occupied and ruled Indonesia in the past? During that time a lot of  Dutch influence almost everything including Indonesian food. And the other way around,  Indonesian taste also affected some Dutch foods - even up to this day. Several examples of classic Indonesian food which affected by Netherlands taste are: Kaastengels, Kroketten, Poffertjes, klaperrtaart, Spekkoek, Ontbijtkoek, Bruine soep, bifstuk, Fracadel (now popular as "perkedel" in Indonesia), Oliebollen, etc. 
Bitterballen which I make now and some other more. Those food are everybody's favorite till now.


Some I already posted here, and I try to make some other too.. ..I believe you will love them.

Bitterballen is small round-- meatball look-alike, coated with bread crumb and deep-fried in hot oil. Better serve it warm with mustard sauce or mix mayonnaise and tomato ketchup/ chilly.

Steamed Spiced Cake from egg whites (Cake Kukus Berempah dari putih telur )

Long holiday for Ramazan Celebration... Now I'm back online again.. Been busy since ramadhan cause we change our sleep and eating time. This year, ramadhan (fasting month) at August which is summer time, so we start our fasting break around 20.00 ( mostly I got my fasting break around 18.00 in Indonesia). We slept late  around 00.00 or 01.00 then I must wake up again at 03.00 morning for prepare "sahur" (last supper before whole day fasting). After morning pray, we usually sleep again until around 9 or 10 morning. And I couldn't cook & post something new because I couldn't taste them during the day.. hehehe..

Then Ramadhan celebration coming, after we fasting about 30 days (mostly) but this year in Turkey we was fasting 29 days. During Ramadhan celebration (in Turkey called Ramazan Bayram. And we call it "Idhul Fitri" in Indonesian language), most of time we spent time with family, relatives and close friends. We visit each other house, lunch or dinner together also eat A LOT of Baklava! (^,^)
During Ramadhan I gain 4 kilos ! ...  :((  *huhuuuhuuu..
You know how hard to loose some weight, but it's VERY easy to gain and gain more weight !

Well.. anyway, I must work harder and eat less to loose some kilo again. So I'll try to make something healthy and less sugar for my snack and dessert. Like this one: Steamed Spiced Cake.. Are you agree this is healthy one? ^,^


Ingredients:
 1 cup egg whites, room temperature
 1 cup brown sugar ( I use only 3/4 cup)
 1 tsp lemon juice
 tip of a teaspoon fine salt

Pandan and Coconut Steamed Cake

Pandan or Pandanus amaryllifolius one kind of tropical plant. The plant is rare in the wild but is widely cultivated. It is an upright green plant with fan-shaped sprays of long, narrow, blade like leaves and woody aerial roots. The plant is sterile, flowers only very rarely, and is propagated by cuttings.

Beside can give such a nice flavoring in foods, some kind of pandan can give beautiful natural green color, I just love it.

This pandan we can plant it either on garden yard or inside pot. Too bad I don't have it in my home here. I have no idea even if I can bring this plant here, whether it can survive in 4 season country like Turkey. I remember my mom plants this pandan in pot at our house in Indonesia.

Last time my friend brought me pandan paste from Indonesia and give me 1 small bottle. I was so happy cause I miss it's fragance and I miss some Indonesian food (mostly dessert and cake) using this pandan falvor...

So here it is my 1st Pandan cake in Turkey @(^,^)@

You can try to find this pandan paste in Asian grocery store in your country/ city, maybe you'll get lucky to have one...





 Ingredients A:
• ¾ cup grated coconut (fresh or dried)
• 2 tablespoons caster sugar

Ingredients B:
• 3 medium eggs
• ¾ cup caster sugar
• 1 cup + 2 tablespoons flour
• 1 tablespoon cornstarch
• 1 tsp vanilla powder
• 1 teaspoon baking powder
• pinch of fine salt
• 1 ½ tsp pandan paste
• 100 gr unsalted butter, melted and mixed with ½ cup olive oil

Ote-Ote / Koheci/ Weci/ Bakwan sayur / Indonesian Vegetable fritter





It's one of traditional Indonesian snack-favorite one. In some places people also eat them as side dish accompanying their main dish. Some areas have different name for it, some call it "Ote-ote" while other area call it "koheci" or "weci" or mostly people call it Bakwan sayur.
Content of mostly vegetables with flour to make thickened, some area put shrimp in it. But generally it's fried vegetables. Serve it warm is always better way to enjoy it, with sambal petis (dark shrimp paste sauce) and birdeye chilly


Ingredients:
• 1 cup fresh shrimp, discard tail and head
• 1 cup bean sprouts
• 1 cup julienn cut cabbage
• 1 cup 
roughly shaved carrot / cut into matchsticks
• 1 cup celery leaves chopped
• 1 ½ cup flour

• 1 small egg, beaten 
• Enough water 
• Enough Cooking oil for frying


Puree/ ground these spices:
• ½ medium onion (or 4 small red onions)
• 3 cloves garlic
• 1 ½ tsp peppercorn
• 1 tablespoon granulated sugar (or to taste)
• Salt and sugar to taste



How to make:
1) mashed/ puree: onion, garlic, pepper, salt and sugar. Puree also shrimp heads and tails into it.
2) In a large bowl, combine all vegetables, flour, baking powder, ground spices, shrimps and eggs. Give enough water slowly~just enough for wet the flour and all ingredients (not too watery). Stir it all until blended, sample a taste, give the broth flavoring if desired.
3) Heat oil over medium heat, fry the dough a spoonful after spoonful. Fry until pink and cooked through.


Note: if you want to have round shape like mine, heat serving soup spoon into hot oil, make sure the ladle is really hot (if not, the dough will be sticky on it). Then put the dough onto hot ladle, place shrimp on top and dip into the hot oil until the dough is separated by it self from the ladle.

Serve warm with chili sauce or birdeye chillies.

Pastel Abon Mini (with fish or beef floss filling)

This is one of my favorite Indonesian Snack. I remember I always have it during my afternoon tea at office, sometime with other traditional Indonesian snack like "lemper ayam" (spicy Chicken shredded between sticky glutinous rice)  and "bitterballen", and other traditional Indonesian snack.

Ingredients and How to make:
  • 4 large potatoes or 5 medium sizes. Steamed and peeled, mash while it's hot
  • 2 tablespoons milk powder 
  • 2 medium-size carrots. Cut into very small cubes. 
  • 1 piece (about 200 gr) of chicken breast, boiled and cut into small cubes or shredded 
  • ± 10 stalks celery, chose leaves only. finely chopped. 
  • ¾ cup whole milk 
  • 4 tablespoons flour. 
  • 3 cloves garlic, crushed and finely chopped. 
  • 4 red shallots, finely sliced (or 1 medium onion)
  • Salt, ground nutmeg, pepper powder and sugar to taste. 
  • 1 tablespoon butter for sauteing.

Lumpia sayuran dengan saus celupannya (vegetable springroll a la Indonesia with the dipping sauce)

Lumpia are pastries of Chinese origin similar to fresh popiah or fried spring rolls popular in Indonesia and the Philippines. The term lumpiaderives from Hokkien lunpia (traditional Chinese潤餅pinyinrùnbǐngPe̍h-ōe-jī: jūn-piáⁿ, lūn-piáⁿ), which is an alternate term for "popiah". The recipe, both fried and fresh versions, was brought by the Chinese immigrants from the Fujian province of China to Southeast Asia and became popular where they settled in Indonesia and the Philippines.
In the Netherlands and Flanders, it is spelled loempia which is the old Indonesian spelling for lumpia and has also become the generic name for "spring roll" in Dutch. A variant is the Vietnamese lumpia, wrapped in a thinner piece of pastry, in a size close to a spring roll though, the wrapping closes the ends off completely, which is typical for lumpia.

In my homeland, famous Lumpia mostly from Semarang (it's one city in central Java), so we call it Lumpia Semarang. Originally we stuffed it with young bamboo shoot (we call it "bung")  together with other vegetables. But since in Turkey I can not find young Bamboo shoot, I replace it with jerusalem artichoke... Nice though, using exactly same seasonings as the original Lumpia in my homeland, this Lumpia has satisfied my craving about my Indonesian food..

STEAMED BANANA CAKE / BOLU PISANG KUKUS




I like the fact that banana has many calcium and one of the best food for our body and diet. Personally, I don't really like to eat them in raw, soft and I think not good for my mouth exercise cause I don't chew much....😊.. I usually make them something like fried banana coated with flour. Or roasted them with chocolate and cheese. and I love "keripik pisang" or banana chips... 

Banana cake? Frankly speaking, I always tried to make them in many different recipes like hundreds of times... believe me.. none of them end up successfully  well d(^_^)b
Never broken heart with this very great, high calcium fruit, I learned and read much literature about banana and how to make it a cake. And this time... Voalllaaa.... I feel I will never fail again handling banana...wohohohoho... and I choose steam method because I love it's the final result, not dry, so moist and fear-free from it'll end up burn in my old oven d(^_^)b -- Just keep eye on water not dry in your steamer, it will be okay.

So here it is.. my Steamed Banana Chocolate chip cake (Cake pisang kukus dengan coklat chip). you can see from picture below, the surface appearance isn't really pretty cause there are dark spot and make small hole.... Well, I'll tell you... I was a little greedy to add more chocolate chips and spread on surface other than that I have already mixed in the batter @(^_^)@ So Please (If you make it) Do not do as I did.. If you want more chocolate, you can mix in the batter, not spread them...

STEAMED BANANA CAKE / BOLU PİSANG KUKUS

Ingredients:
- 3 eggs
- 1 /2 cup granulated sugar (for me it's sweet enough, but if you want to reduce or add, just do it a little)
- 1 + 1/4 cup flour
- 1/2 tsp vanilla powder.
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 medium-size bananas (mashed-I use a fork only)
- 100 gr Margarine-Melted
- 1/2 cup chocolate chips

:: Alternatively, you can use raisins or mixed dried fruit for chocolate chips.

Steamed Zebra Cake from Egg White

Pretty often we make a cake or ice cream, most recipes leaving the egg whites  .. Usually we only collect that egg white and put in refrigerator just until we knew already piled a lot without knowing what to do ..
Same case as me recently .. 

And after searching all my recipe files special using (left over) egg white, finally I decided on this steam cake.

  • 450 ml egg whites
  • 1 cup caster sugar
  • 2 tsp lemon juice
  • ¼ tsp salt
  • ½ cup flour
  • 2 teaspoons baking powder
  • 1 tsp powdered vanilla

  • ¾ cup olive oil or other vegetable oil will do

Dadar Gulung Hijau Indonesian Filled roll pancake

Green pancake stuffed with sweet grated coconut.
Suddenly I feel like want to eat this traditional green roll pancakes, miss it so much!. Been so long I do not eat this childhood snack. Back when I was in Indonesia I also had rarely make it at home, easy way, I just went to bakery which selling traditional snack or there would be somebody always around our alley selling many traditional snacks ...hhmmm... I just miss my homeland ...


Ingredients and how to make:
For Filling:
- 4 cup grated coconut (I use dessicated coconut)
- 50 gr palm sugar
- 5 tablespoons brown sugar (add more if you like more sweet)
- 2 tsp vanilla powder
- 1/2 cup water
- Pinch of salt
Heat the sugar and brown sugar with water and salt, put grated coconut and vanilli. stir over medium heat until the water a bit dry. Remove and set aside.

Ladrang Jagung (Indonesian traditional corn snack)


Indonesia has many kind traditional food and snacks. We make it from various ingredients cause we have maannyy of them.. Before I made "Onde-Onde" ... now allow me to introduce you "Ladrang jagung". It's light snack made from fresh corn. Nowdays, this snack getting rare to find unless we make it homemade.

Ingredients:
- 3 pieces medium fresh corn.  shredded
- 1 ~ 1 1 / 2 cup flour
- 100 gr butter
- 1 egg
- Chili sauce to taste (I use chili paste 1 / 2 tbsp)
- Salt and sugar according to taste.
- Enough cooking oil to fry.

Onde Onde / Indonesian fried glutinous dumpling



Indonesia is rich in diversity of traditional food. Start from Tuber-based, soy, all kinds of flour, until the food based from Indonesia's vast ocean.
Feels proud to have such a diversity of taste and incomparable culinary wealth.
One is  "Onde-Onde" ( funny name, isn't it? ..). My favorite snack from my childhood. Onde-onde made of glutinous rice flour, shaped round like small balls containing sweet mashed mung beans and covered with sesame seeds.


And being far from home makes me want a little nostalgic, slightly reducing the homeland missing I make them on my small kitchen ... while my glutinous rice flour supplies from Indonesia are still there.

Keripik bayam ( Indonesian Spinach spiced chips)

Very popular and every body's favorite. Made from spinach, wrapped with combination of  rice and tapioca flour plus some spices. Fried in deep oil. so crispy... once you eat it.. you'll forget to stop 
Wanna try to make it?




Ingedients need to be prepared:
- 1/2 kg of spinach leaves. Wash and drain.
- 2 cups rice flour.
- 1 cup tapioca flour
- 3 cloves garlic
- 2 candllenut
- 1 /2 tbsp coriander seeds
- 2 kaffir leaves.
- Salt to taste
- Oil for deep frying


Method:
1) Pound and puree garlic, coriander, kaffir leaves, candlenut and salt.
2) Mix the rice and tapioca flour with ground spices above. Give SMALL AMOUNT of water. Be careful not too watery. The dough should be thick enough. Test the taste.
3) Heat much oil in a deep skillet/ pan. Dip the spinach leaves one at a time into the flour mixture and fry until yellowish. Use medium heat only so not to burn.


Store in a dry jar and cover tightly. Enjoy.

Kue kering #nastar bentuk daun/ Leaf shape pineapple cookies

One among many other Indonesian classic cookies. With pineapple jam as filling, just nice thing to be side of your coffee/ tea cup d(^_^)b


Ingredients:
- 500 grams of flour
- 200 gr cornstarch
- 250 gr butter
- 250 g margarine
- 120 grams of milk powder
- 200 gr powdered sugar
- 1/2 tsp powdered Vanilla
- 4 egg yolks
