First, Ramadhan Kareem to all my Muslim friends around the world. May the spirit of Ramadhan stay in our hearts and illuminate our souls from within.
We are happy can meet Ramadan again this year, but a little sad since this Ramadan we are in an unfortunate situation that makes us stay at home to isolate ourselves from the COVID-19 pandemic. 
Generally, we would have wonderful iftar together with families and friends. We invite each other to have an iftar dinner where beautiful and happy moments are shared.
Iftar, also known as fatoor, is the evening meal with which Muslims end their daily Ramadan fast at sunset. They break their fast at the time of the call to prayer for the evening prayer.
I hope this condition will end up soon and we can have a peaceful life back.

Today I will share our favorite, it calls Beğendili Köfte. Köfte is a traditional Turkish meatball (kofta) made from mincemeat mix with "baharat" or spices. The meat is used commonly beef or lamb or mixes both of them. Köfte is very popular here and everybody's favorite.

Beğendili from the word beğendil, it's an ember-roasted aubergine, finely minced then mixed in a creamy cheesy sauce similar to the bechamel sauce. This dish it's not only widely popular as a restaurant meal but also homemade versions are rich and served at home.

Merhaba dari Türki semuanya 👋

Bikin brownies adalah pilihan pas buat saya kalau pengen bikin dessert yang cepat dan praktis. Gak pake mixer listrik, tinggal aduk-aduk pakai sendok kayu semuanya, lalu dioven.. selesai. 
Ngovennya juga gak lama-lama, sebab kalau terlalu ngoven hasilnya malah gak bisa fudgy alias bertekstur lembab khas brownie ala Amerika.
Aduknya juga saya gak pakai wire whisker karena kalau pakai itu teksturnya cenderung "cake-y" atau lebih menyerupai kek.

Kali ini saya bikin brownies ala starbuck .. yang terkenal dengan espresso brownie nya. Resep saya adaptasi dari blog littlespicejar dengan sedikit perubahan menyesuaikan bahan yang ada.

Ketemu lagi ya dengan postingan edisi kangen kampung halaman 😊 .. sekalian lagi pengen makan banyak sayuran. Sebenarnya makanan Turki juga kaya sayuran. Dan hampir semua makanan, sandingannya selalu ada salad segar.
Salad disini bisa dibuat dari bermacam-macam sayuran juga, disajikan segar dengan "dressing" atau saus salad yang sederhana, terdiri dari minyak zaitun, perasan lemon dan garam. Variasinya kadang ditambah dengan "sumac" atau kadang cuka anggur.

Suka banget makan cuman gadoin salad khas sini... Tapi yaitu tadi.. kadang kangen makanan kampung udah numpuk sampai ubun-ubun. Nah.. kebetulan yang dikangenin ini gado-gado khas Surabaya.. jadi lumayan butuh perjuangan lah bikinnya.

The diversity in Indonesia has led to a rich culinary heritage. From the famous rendang to Indonesian salad gado-gado, every Indonesian food is really worth to try.
Just like what I am going to share today- as my promise before from the previous post, that I will post Gado gado Salad in a different post. 
So here it is..... 😃

Gado gado is one of popular Indonesian dishes. Its on the list of Indonesian national dish among with others.
It's a dish consist of a mix of pre-boiled vegetable and fried tofu (or sometimes with tempeh) and dressing with creamy umami peanut sauce then served with kerupuk (shrimp cracker or other type of cracker). Lontong or rice cake also serves as a complement. Adding simple chili sambal is most people's choice to enjoy this delicious and healthy gado gado.

Today's post might be a bit longer than usual. Cause I will tell you a little more about Indonesian cuisines- my beloved country 💓

Last Friday I was lucky enough to be a guest cook for Beyond Kitchen by young chef and gastronomy - Mohammad Alard. We cooked and served some Indonesian menus for our expat fellows in Istanbul.

Beside cooking, I also presented and tell to the guests about the dishes they enjoyed that night. And I am going to share to you as well 😊




Well, where can I begin?
Indonesian has the most unique cuisine in the world due to the combination of cultural diversity and its geography.
Most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.

We serve simple foods in general, but using plenty of herbs, various roots, spices, leaves and grasses adds zest to most of our meals. Some of you may think that Indonesian foods are spicy and hot because we use chili pepper on mostly every dish. But it's not really true. In fact, the most widely used spices are cumin (caraway), coriander, and ginger. All relatively mild spices and give such a mild aromatic dishes.

Some other countries have bread as a staple food. In Indonesia, rice is the most important staple food. We eat it for breakfast until dinner. İt normally accompanies every meal too. For daily consume we eat steamed white rice. Even you may find some other type of rice such as white Glutinous rice and black glutinous rice. But those glutinous rice usually being used for our snack (jajan) , cakes or on sweet treats. check Indonesian food category  and Indonesian snack (kue) for more.

But rice is not the only staple for All Indonesian. In eastern Indonesia, like Maluku, we can find sago as their staple food. And some other regions people eat cassava and corn as main staple. 

The most common method for preparing food is frying, sautéing, and steaming. Although of course grilling, simmering, roasting, and even baking are also popular. 

Besides famous with a variety of spices and herb, using coconut is commonly find in mostly Indonesian foods. We use coconut start from its flesh, its water, coconut milk, until its leaves. Coconut used in main dishes, side dish until sweet treat.

Satay is a grilled meat dish famous throughout Southeast-Asia. Indonesians consider it a national dish conceived by street vendors. These tasty meat skewers are most popular with chicken, beef also lamb or mutton. We also have vegetarian satay version use tofu and tempeh instead of meat. 
Traditionally it served with white steamed rice or cake rice (Ind; ketupat and lontong). 

And generally it served with fresh cucumber pickle as well. Some area (like Madura island) serve together with bone soup or in middle Java serve this satay with gulai tongseng.

So if you want this satay in quick, you should prepare your white rice or cake rice in advance. Also you need to make peanut sauce and fresh pickled cucumber ahead.

In Indonesia it self there are many types of satay from various regions and of various ingredients. For example, from Padang city (Sumatra), I like satay Padang. There are also "sate kelapa" (beef satay wrapped with grated coconut-My best favorite)-it's mostly common from Madura Island, quail eggs satay, clam satay, 'tempeh' and tofu satay or mushroom satay for vegetarian option.
And there are dozens of other types of satay (which is nearly I have eaten already).

Etsiz Çiğ Köfte / Turkish Meatless Raw kofta "meatball"

Merhaba..... Have you been to Turkey before? 
Turkey, where you can indulge your eyes with countless beautiful and historical places and scenes. And the place which satisfy your taste with dozens of shockingly delicious street foods. 

Many of my previous post of Turkish food are street food with homemade style cause İ love experiment and taste new flavor of Turkish street food then try to copy for cooking at home.
But of course İ love to learn basic and traditional Turkish food that local women serve for their family as well.
And my post today is Etsiz Çiğ Köfte, literally means meatless raw "meatball". İt's no meat version of Çiğ Köfte (read; chee kuf-te),  one of Turkey's favorite fast food/ street food. The raw meat (non fat) mixed and knead with fine grain bulgur and many kind of baharat / spices. Çiğ Köfte traditionally shaped in small long balls serve with many fresh vegetables, cucumber pickle and chili pepper pickle, with adding of sour pomegranate molasses (nar eksisi) and lemon juice. Some love to enjoy with lavash (flatbread) while other just wrap it with lettuce.

My today today post is another Surabaya-nese ( if I may say so for things from Surabaya 😊 )

Surabaya is the capital city of East Java province and it's my homeland. The second largest city in population after Jakarta.

And as other regions/cities in İndonesia Surabaya is also famous for the richness of its own typical cuisine. Talking about Surabaya food is like holding a very long shopping list that you want and need them all! Surabaya foods are rich and full of flavor distinguish from other cuisines from other İndonesian cities/regions.
And one of the typical ingredients from Surabaya (and neighboring towns) is "petis". Petis is a product ingredient made of shrimp in paste form. Some call it shrimp paste butcall İ  it just "petis" so not being confuse with "terasi" or "belacan" (another shrimp product). Below here you can see the difference between "petis" and "terasi/belacan".
But both shrimp products are staple ingredients in most İndonesian cuisines. İ brought them from İndonesia last year during my family visit.

Postingan hari ini it's all about remake... Maksudnya bikin ulang makanan yang biasa kita nikmati di restoran. Karena tulisan ini saya sertakan untuk Indonesian Food Blogger Food Challenge dengan tema "Remake"
Untuk kalian para foodie yang pengen join challenge food bulan Maret ini bisa gabung di link Idfb sini.

Well... membuat makanan homemade bukan lagi hal yang jarang saya lakukan. Sejak tinggal di sebuah kota bernuansa tradisional dimana rata rata masyarakat lokal terbiasa menyajikan produk homemade bagi keluarga. Dan hampir semua yang tersaji di meja makan keluarga Turki adalah hasil olahan sendiri, maksud saya SEMUA! 
Serius. Mulai dari yogurt, keju, pasta tomat, pasta cabe, pickles/ acar, mayonese dan produk olahan lainnya. Kita senang sekali membuatnya di rumah!

Termasuk makanan lokal yang banyak disajikan di rumah makan siap saji atau restoran. Para wanita Turki senang sekali memasaknya dengan versi homemade. Karena setiap selesai menyantap makanan, setiap anggota keluarga akan memberikan ucapan terimakasih berupa "doa" kepada yang memasaknya dengan ucapan: "ellerinize sağlık" yang kurang lebih berarti "semoga tangan(mu) diberi kesehatan" ... Such a lovely thing isn't it? ^,^

Pideli Köfte recipe (Turkish Kofte with pide/ flat bread)

When you visit Bursa there are some local cuisines you should try. For example; İskender Kebab, Bursa cantık (read; jantek is a kind of pide with round shape with meat topping), Pideli Köfte, İnegöl Köfte, Yenişehir Kasap Köfte, Kemalpaşa tatlısı, kestane şekeri, and more with recommended  places around the city.

Some of them I already post here in my page for you if you want to make at home. And now I'd like to share my homemade Pideli Köfte (kofte meatball with pide bread).
The flat meatball serve over pide chunks flush with tomato sauce then during serving hot melting butter splashed over the plate, bring wonderful appetite aroma.

Also serve with yogurt, grilled tomato and carliston chili pepper bring you more another delicacy of traditional Turkish food. For complement serve some vegetables pickles, chili pickles and ezme in other small plates.

Because of so many complement and things to prepare mostly people eat outside and hesitate to prepare at home. But for me who love to try new thing/ recipe especially Turkish cuisine. And more over, those complements are things that always ready in my fridge.
But if you want to make it at home as well, basically you just need to prepare pide bread, meatball and tomato sauce which I will share today.

Resep Tahu Tek khas Surabaya (Surabaya style Tofu in peanut sauce)

You know, Indonesia has many many traditional food and each regions or city has their own typical food as well. 

And my today post is "Tahu Tek" , it's one of Indonesian traditional meal originally from Surabaya city-East Java. Tahu means tofu in Indonesian language. People call "tahu tek" maybe because the seller (mostly mobile traditional street vendor, we call it "gerobak") make a typical noise sounds  " tek..tek..tek..tek" very loud and shrilly along kampoong/ alleys. That sound comes from the wok clink with fork or spatula by the seller to get attention.


Surabaya is "the home" of "tahu tek" . You can find this food seller more than 2 or 3 sellers almost at the same time in same alley, it's different from in other city. You should go to a certain place where one seller have open a stall.

The typical of "tahu tek" is they use scissors instead of knife to cut everything during the serving with a very noisy sound they make...clak...clak...claakk. (^,^)
Another unique thing about this "tahu Tek" is they only sell this food only at night, in many kampoong/ alleys you probably can meet this "tahu tek" seller upper 8 or 9 pm. I have no idea why...but for me (also for my families) the taste would be different if you eat it at noon or morning... This tahu tek kick your appetite when it ate beyond 9 pm or even midnite! it's REALLY... ! So I call it "midnite snack" (^,^)

I am original from Surabaya..so I know almost everything about this my favorite food (^,^)
