Turkish (flat bread) Ramadan Pide with #poolish method / Ramazan Pidesi (poolish ön mayası) | Çitra's Home Diary

Ramadan pide, is one of the Ramadan staples here in Turkey. It's a traditional soft-leavened Turkish bread. Round or oval and rather flat in form, and having a weave-like patterned crust, Ramazan pidesi is made of wheat flour with yeast and topped with egg glaze and sesame and or nigella sativa seeds.
It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.


With Ramadan starting, everyone is waiting for the moment they get a hot Ramadan pide for iftar (fast-breaking meal) and put butter on it or dip into a hot soup (çorba). Enjoying the enchanting smell before eating the whole piece in a second. 

And seeing a long queue in front of fırın/ public bakery before iftar time to get this delicious flatbread fresh from the oven is a common view. But since the COVID-19 pandemic, people hesitate to go out and no crowd being allowed.
Most public bakery already produces this pide bread before 6 PM and are already wrapped up waiting for people to buy or they will distribute to the neighborhood. 


Baking bread at home has also become more popular these days. During the pandemic, people tend to cook or make anything at home including baking bread.
But for me, baking bread it's not about a trend. I love baking my own bread cause my husband loves to eat homemade bread.

Damla sakızlı Süt Helvası / Turkish dessert; Milk Bake pudding with mastic gum | Çitra's Home Diary

We are enjoying the month Ramadan in Muslim world right now. So, we are cooking and baking Ramadan recipes at home. For Turkish, the dinner table (iftar safrası) in Ramadan should always be special. More special than the daily table.

We start the iftar dinner with hurma (date) as our sunnah. Then soup ( turkçe; çorba) as our appetizer. Then we will have an entreé complete with salad as a side dish. Then dessert (tatlı) is served most probably a few minutes after iftar (break the fast) together with tea time sometimes.



Since we had our iftar (break the fasting) full flavors, we serve them in small portions or as a personal preference. And we want our dessert is light.
Just like what I am going to share today. It's a light, creamy yet delish Turkish milk pudding called süt helvası. Süt in Turkish means milk. Helvası from the word "helva" means halvah or sweet/ dessert. This dessert is famous from Bursa, the city I!m living in now.
This dessert is one of a repeatable menu in my house, I made this many times since it's my husband's fave. You can check my previous Süt Helvası here.

First, Ramadhan Kareem to all my Muslim friends around the world. May the spirit of Ramadhan stay in our hearts and illuminate our souls from within.
We are happy can meet Ramadan again this year, but a little sad since this Ramadan we are in an unfortunate situation that makes us stay at home to isolate ourselves from the COVID-19 pandemic. 
Generally, we would have wonderful iftar together with families and friends. We invite each other to have an iftar dinner where beautiful and happy moments are shared.
Iftar, also known as fatoor, is the evening meal with which Muslims end their daily Ramadan fast at sunset. They break their fast at the time of the call to prayer for the evening prayer.
I hope this condition will end up soon and we can have a peaceful life back.

Today I will share our favorite, it calls Beğendili Köfte. Köfte is a traditional Turkish meatball (kofta) made from mincemeat mix with "baharat" or spices. The meat is used commonly beef or lamb or mixes both of them. Köfte is very popular here and everybody's favorite.

Beğendili from the word beğendil, it's an ember-roasted aubergine, finely minced then mixed in a creamy cheesy sauce similar to the bechamel sauce. This dish it's not only widely popular as a restaurant meal but also homemade versions are rich and served at home.

Regardless of the name, this meal is an absolute winner, especially for a quick yet delicious dinner. And it's a one-pot meal that I believe you will keep this recipe for a repeatable menu for your family 👪

Trileçe / Pastel de Tres Leches / Tres Leches cake. Perfect and Best recipe.

The name tres leches derives from the Spanish words "tres" means "three" and "leches" which means "milk". 
During the preparation, three different milks are used in the syrup poured on the cake, mostly sponge cake base. It called trileqe in Albanian language and people called it trileçe in Turkish language. 

Rumors said originally it made from three kind of milk: cow, goat, and water buffalo. But then after 1930s it started using processed milk (like UHT) and cream due to an increase in industrialization and urbanization. That made tres leches more popular since then all over Northern Mediterranean. 

A variety of tres leches known as trileçe in Turkish language, has recently become popular in Turkey. One theory is that the popularity of Brazilian soap operas in Albania led local chefs to reverse-engineer the dessert, which then spread to Turkey. It was later popularized by the then Albanian Prime Minister Fatos Nano, who was spotted eating the dessert on the Bosphorus Bridge. 
The Albanian/Turkish version is sometimes made literally with three kinds of milk: cow's, goat's, and water buffalo's, though more commonly a mixture of cow's milk and cream is used. Tres leches (trileçe) consist of three main elements; Cake, Milk mixture, and Sauce/ topping. Mostly in local patisseries here in Turkey, we use caramel or chocolate sauce topping while some using different kinds of fruits jam sauce also - next time I will try fruity sauce.

Köfte (or kofta) is a family of meatball or meatloaf dishes found in the Indian subcontinent, South Caucasian, Middle Eastern, Balkan, and Central Asian cuisines. In the simplest form, koftas consist of balls of minced or ground meat—usually beef, chicken or lamb—mixed with spices and/or onions.

In Turkey, köfte is one of traditional staple. There are hundreds of different varieties and vary greatly in size and shape. 
Some are long and thin- we call it parmak köfte, typical to İnegöl Köfte. 
Others are balls, and others are patty shaped typical to kasap köfte or Pideli köfte.

Or when you visit Bursa you should try Pideli Köfte, it's a small flat patty shape meatball served over pide flat bread flush with yummy tomato sauce then "fizz" with hot melted butter. You can check how to make it home here
There is another köfte from İnegöl town named İnegöl Köfte. Each köfte (meatball) has own typical.


Köfte variant also can be determined  base on meat used. It can be made from beef, lamb, or a combination of the two. Sometimes chicken or turkey (in Turkish language we call it "hindi tavuk" 😊)

Pogačice (diminutive of pogača) is a type of pastry. Pogača, Poğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten in Bosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries), Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is called pogatschen in Austria. 









Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.
Mostly eaten for breakfast but also as appetizer during noon together with Turkish bulgur salad (kısır), or potato salad and hot tea.

Fırın Sütlaç or baked rice pudding, is one famous traditional dessert from Turkey. Served much better after keeping in the fridge to develop the texture and taste.
Some recipes can vary from one cookbook to another. Some people may add cornstarch or rice flour to their recipe. And mostly we use damla sakızı or mastic gum for this dessert. You can check my previous post for version using mastic gum here.

Another type of  Sütlaç is nonbake, but both are just great. Try it and I believe your family will like it as well.

Ramadhan is the ninth month of the Islamic calendar, and the month in which the Quran was revealed to the Islamic prophet Muhammad. Fasting during the month of Ramadan is one of the Five Pillars of Islam. The month is spent by Muslims fasting during the daylight hours from dawn to sunset.



This dessert well know from city of Bursa, where I am living. Everybody know and love this milk pudding. Every kids grow up with this simple yet delicious dessert. Beside Fırın Sütlaç or other sweets, this süt helvası is always on iftar menu in every Turkish family.

During Ramadan, two main meal are served. İftar, is the meal to break the fast after sunset. Typically, people will enjoy dates, dried apricots and Ramadan juices, before heading to evening prayer.
And Suhoor is a meal taken just before sunrise (the fajr), before the day of fasting starts.


Ramadan is known for its wide variety of irresistible meals as an iftar. And it cannot be completed without having dessert or sweets. I know, in Ramadhan we should prepare our body and soul more on ibadah than cooking but as a mother we should also provide our family with good quality of food during Ramadhan.

We call this dızmana (read;desh-mana), dizman or dıclama. But mostly people just named it göçmen böreği

İt's not really like pastry you probably know which made from thin layers of phyllo dough or puff pastry or flaky dough pastry.
İt's a pastry dish, bread-like pour with yogurt egg sauce then bake.
Sometimes fill with cheese or mashed potatoes, but plain without any filling also as good as with filling.

This dızmana is commonly made in Bulgaria by Thracian immigrants. But now everybody across regions also love to bake it.

Simit....is  Turkish style bagel. 
Famous among all Turkish people or people who had visited Turkey. İt's very difficult to turn your head and did not find this- round, chewy inside, cover with sesame- bread. 
You can find it easily in every corner or mobile seller in Istanbul's street or any street all around Turkey.
I can say this bagel is Turkish's signature. Write this on your "must try" list when you plan to visit Turkey 😊

Every kid grew up with this simit. Every adult will miss this simit while they were away from their homeland. People can eat it almost every day, every morning, every afternoon with a glass of hot Turkish tea or cold ayran (Turkish yogurt drink).
This is one of fast-food breakfasts for busy workers or students in hurry to school.

Bread or ekmek we call in Turkish language is a staple of all food in Türkey as well very much important in Turkish culture.  Not just bread, we treat our food with respect. Wasting foods (bread) is disrespectful and günah or sin.

Eat and finish what you take.

Bread is always on our dinner table. Serve morning to evening. Dip in a hot creamy soup, eaten with Turkish köfte (meatball) in between or any meal. Or just simply spread it with salça (homemade tomato paste) for hurry brunch.

You can find a dozen types of ekmek/ bread in market or local fırın (bakery) which always serve fresh and hot bread from a traditional big stone oven. And there is one bread that is specially baked on a special occasion, Ramadhan or Ramazanİt's Ramazan pidesi.


There are many classic dishes that are associated with Ramazan in Turkey. But no other item signifies the breaking of the fast better than a loaf of pide (read; pee-deh).
Ramazan pidesi is round and flat in form and has a weave-like patterned crust shape by fingers.
Ramazan pidesi is made of wheat flour with yeast, rub with egg wash, and topped with sesame and black sesame seed.













It is traditionally served for the iftar and sahur meals during the holy month of Ramadan
is a highlight bread in turkey during Ramadhan month.


Bakeries all over Turkey provide this Ramazan pidesi hot and fresh about an hour or two before iftar time. So you will see a long queue in front of fırın/ bakery before iftar time to get this delicious pide hot from the oven during the month of Ramadhan.

İncluding my post today is one of daily meal which mostly Turkish mothers serve for the family. Köfteli patates is home style meal that served generation to generation. Every kids fan of their mom's version of this food 😍


İt's a potato cook in tomato sauce, adding small meatball to meet the family taste. Some version adding ground beef instead of meatballs. Sprinkle with dried mint leaves this meal is a must to try when you visit Turkiye.

There is İzmir köftesi origin from İzmir city (see recipe here), or when you visit Bursa you should try Pideli Köfte, it's a small flat meatball served over pide flatbread flush with yummy tomato sauce then "fizz" with hot melted butter. You can check how to make it home here. There is another köfte from İnegöl town named İnegöl Köfte.
Each köfte (meatball) has its own type.

And today İ'd like to share my family's favorite; Köfte Kebabı or Kofta (meatball) kebab. At a glance, it may look alike Adana Kebab, but it's totally different.
This is just simply meatball wrap over 2 cm wide bamboo skewer then grill or roast in oven/grilling. The spice used for this köfte is more simple than Adana Kebab, but believe me, it is still packed with the flavor of Turkish cuisine.

We, especially husband very much enjoy fast food style homemade meal on our menus e.g döner kebab or pizza.

İn Turkey we have dozens types of döner base on meat used, origin and the way it cooked. 

İ already posted some of homemade style Turkish fast food on some of previous posts. 
Many of them for example famous Istanbul street food Kumpir or food you should eat when you are in Bursa city; Pideli Köfte ( meatball served over sauced flat bread). And the world class famous Adana Kebab . For you who enjoy vegetarian food, you should try my meatless Çiğ Köfte (raw "meat"ball)

Adana kebab is a hand-minced meat kebab, mounted on a wide long skewer then grilled (mangal) over charcoal. This kebab mostly has a spicy distinguished taste due to the addition of a lot of spicy Urfa biber / isot biber
Urfa biber is a dried Turkish chili pepper (type of Capsicum annuum cultivatedorigin from Urfa (Şanlıurfa- one province in southeast Turkey) 

This kebab is named after the city where this famous kebab came from - Adana.
Adana is the 6th big city in population (2016) in Turkey (south).

Urfa biber / isot biber

There is also similar to this kebab named Urfa kebabı ( from Şanlıurfa) or people calls haşhaş kebabı which is less spicy than Adana kebab.

But I assure you those kebabs are extremely delicious and once you eat it you won't forget the taste and you will ask for more. 

Even the kebabs from Adana city (far away to south Anatolia), no need to worry if you visit Turkey (Istanbul or other cities) you'll find this Adana kebab seller everywhere almost in each city. But still-of course-you must-visit Adana to taste the real bud of Adana kebab 😊
