Rujak Apel dan prem Serut (Indonesian apple and plum shredded salad)

One of many other traditional Indonesian food. "Rujak Serut" or shredded spicy fruit salad. Usually made from  mixture of various fruits are grated and given palm sugar and tamarind as sauce. Mostly added chili to give hot spicy taste. Really nice enjoyed while it's cold. 
But this time I try another mix fruits variation, the green apples and green plums, both have a distinctive sour taste. No less tasty and fresh than other fruits combination.


İngresients and how to make:
- 2 large green apples. roughly Shredded
- 200 gr of green plums. roughly Shredded


sugar sauce:
- 250 gr palm sugar
-  tamarind paste 2 tsp
- Pinch of salt
- Enough water.
- birdeye chillies to taste

ground birdeye chıllies and puree with salt and tamarind. Add palm sugar and small amount of water, no need too thin, just thick enough to make sauce.
Combine sauce with apples and plums that have been shredded before. Store in refrigerator before serving.

My Chicken macaroni Soup

Change of weather that suddenly cold last week makes me somewhat less fit and have a cold. I rarely drink or want to consume cold pills. Usually I just drink a lots, consume vitamin C and ate my favorite soup. 

And here it is my favorite soup, Chicken macaroni soup, especially when it got flu, so comfort at least for me...

Ingredients:
- 2 cup macaroni. Boil with salt until cooked. Drain and put some cooking oil in order not to stick to each other. Set aside.
- 300 boneless chicken meat.
- 1 medium-sized potato. Peel, cut into cubes.
- 2 medium-size carrots. peeled, cut into round or cube.
- 4 cloves of garlic. finely chopped.
- 1 teaspoon pepper powder (or to taste)
- Salt to taste
- leek. chopped for sprinkle when serving.

JAKARTA, KOMPAS.com - Recently, at 11:30 pm, Mount Merapi erupted again, spewing hot clouds as high as almost 3.5 kilometers. This is the second massive eruption along on this Friday (05/11/2010).
Observed from Balerante, colored balls and thick clouds rolled vertically into the air, with an estimated altitude reaches 3,500 meters. Because the wind from the north and northeast, the fungus blast moves toward the west and southwest. While the hot clouds glide leads to the upper Kali Gendol in the southeast. There has been no official reports of BNPTK about this eruption.
This information is direct visual observation, on Friday (05/11/2010) at around 11:35 pm. Some mountain slopes covered with thick black clouds . Relatively high seismicity detected by seismographs installed ringing signal on several posts to monitor. Residents on the slopes of the southwest, southeast, south and west requested extra vigilant.


As reported, the massive eruption of Merapi had previously occurred on Friday early this morning. Due to the massive eruption was carrying 55 people killed so far. Prone areas was extended from initially 15 kilometers has now increased to 20 kilometers.

JAKARTA, KOMPAS.com — Baru saja, pukul 11.30 WIB, Gunung Merapi kembali meletus, mengeluarkan awan panas setinggi hampir 3,5 kilometer. Ini merupakan letusan dahsyat kedua sepanjang Jumat (5/11/2010) ini.
Terpantau dari Balerante, bola dan gulungan awan berwarna pekat vertikal bergulung-gulung ke udara, dengan perkiraan ketinggian mencapai 3.500 meter. Karena tiupan angin dari utara dan timur laut, cendawan semburan bergerak ke arah barat dan barat daya. Sementara luncuran awan panas mengarah ke hulu Kali Gendol di arah tenggara. Belum ada laporan resmi dari BNPTK soal letusan ini.
Informasi ini merupakan pantauan langsung secara visual, Jumat (5/11/2010) sekitar pukul 11.35 WIB. Sebagian lereng dan tubuh gunung diselimuti awan tebal berwarna hitam. Kegempaan terdeteksi cukup tinggi berdasarkan denging sinyal seismograf yang terpasang di beberapa pos pantau. Warga di lereng barat daya, tenggara, selatan, dan barat diminta ekstra waspada. 

Seperti diberitakan, letusan dahsyat Merapi sebelumnya juga terjadi pada Jumat dini hari tadi. Akibat letusan dahsyat itu tercatat 55 orang tewas hingga saat ini.  Daerah rawan pun diperluas dari semula 15 kilometer kini meningkat jadi 20 kilometer.

Non Alcohol TİRAMİSU


This Italian Dessert is definitely Every one's favorite .... Combination of coffee taste in moist Sponge cake (or can be sponge finger) with delicate cream cheese plus a sprinkling a lot of chocolate ... hhhmmmm .... No other word than just   t i r a m i s u




Materials and how to make it:
1 recipe of chocolate sponge cake recipe can be found here
Ingredients I:
- 1 cup cream cheese (or Mascarpone cheese)
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter. Softened at room temperature.
Whisk all ingredients I with electric mixer until completely mixed and smooth. Set aside. Ingredients I as a substitute for mascarpone cheese. So you can directly use the mascarpone cheese if any, use 1 + 1/2 cup, smooth it with electric mixer.

Ingredients II:
- 75 g whipped cream powder.
- 2 tbsp caster sugar
- 150 ml cold water
Beat using a mixer until stiff material II, Set aside and keep refrigerated.

Ingredients III:
- 4 egg yolks
- 2 tbsp caster sugar.
Boil water in a saucepan, beat eggs and sugar over hot steam above the boiling water (double boil system) until the eggs turn pale and the sugar dissolves. Set aside

Materials IV:
- 3 tablespoons instant coffee (can be reduced to 2 tablespoons if you do not want the kids too much coffee)
- 200 ml of warm water.
- 2 tbsp sugar (reduce to 1 tablespoon reduced if you reduce the coffee)
Stir to dissolve all the ingredients IV. Set aside.

Garnish:
Chocolate and cocoa powder to taste.

Assembling:
1) Stir and mix evenly  ingredients I and II  in a large enough container. mix in material III (egg mixture). Stir until all ingredients completely mixed, use mikser low speed only.
2) Prepare serving glasses or you could use spring form-- I use serving glass so I cut my sponge cake to glass size. Moisten with coffee mixture. Arrange on serving glasses, give cheese cream mixture,make it evenly smooth. Stacking with another moist cake and cream again, do same thing 2 or 3 stacks.
3) Keep in refrigerator at least 4 ~ 5 hours, sprinkle with cocoa powder and garnish as your taste before serving.


Enjoy while it's cold.

Dim sum dipping sauce ( Saus celupan untuk dim sum)

One of dim sum dipping sauce that can complete your dim sum menu or just for another dipping sauce you like.





Ingredients:
- 3 tablespoons chili sauce
- 3 tablespoons soy sauce
*
- 1 teaspoon sugar
- 1 teaspoon olive oil
- small amount of  water

* If using sweet soy sauce, no need to add sugar

Mix and stir all dipping sauce ingredients and cook over low heat until thick.

Ready to use.

Chicken Dim sum

Asian taste menu this time I gonna serve Dim sum. But since hardly find a mackerel or shrimp--maybe not yet it's season here  :), I finally decide to make dim sum with chicken version only .... But it's  not less yummy than fish version ... just try it, you'll gonna like it  :)
Ingredients:
For dim sum skin:
- 1 cup tang mien flour/starch, wheat flour (wheat starch) *
- 1  ½ tbsp corn starch
- 2 tablespoons vegetable oil
- 3/4 cup hot water (boiling)

* In Turkey use Buğday nisaşta

How to make dim sum skin:
Mix the tang mien flour (Wheat starch) and corn starch. Pour hot water while stirring with a wooden spoon. Then add the vegetable oil and knead the dough until smooth and can be flatten with a rolling pin.
Roll the dough with a rolling pin thinly. Ready for use.

Ingredients for filling:
- 300 minced chicken meat
- 4 pieces large size of pine mushrooms. chopped into small pieces
- 2 carrots medium. Grated harshly.
- 2 tablespoons soy sauce
- 1 egg
- 2 tablespoons vegetable oil
- Salt, sugar, and pepper to taste
- 4 ~ 5 cloves garlic, puree.
- 2 teaspoon ground ginger

Mix all filling ingredients , test the taste. Ready to use as stuffing.

Finishing:
1) Roll thin the Dimsum skin and forms a circular shape according to your taste.
2) Fill with stuffing mixture and give a piece of carrot on top of it. brush with oil so it won't sticky to each other.
3) Steam for approximately 15 minutes. 

Serve warm with the sauce or with your own favorite chilly sauce.

Kue Bolu Coklat (Chocolate Sponge Cake)

I remember once my late grandmother making this cake when I was young once and started to like making something simple in the kitchen. There were currently no electricity mikser that time, so my grandmother only use manual eggbeater that looks like a circular and supple pear, but strong. Too bad we do not keep it anymore. "Kue Bolu" is just we always call. 
Now with the various developments and culinary techniques this sponge cake now beginning to develop into a modern recipe with the addition of several 'emulfier' and other additional materials sponge cake is more popular and varied from simple old recipes. 

Trying again this old recipe without emulfier, this time I make chocolate version because my first intention is going to make tiramisu later from this basic sponge cake


Ingredients:
For pan size of 22 cm round.
-1/2 cup flour
- 1 +1/2 tablespoons cocoa powder
- 5 egg yolks
- 4 egg whites
- 1/2 cup caster sugar
- 100 gr unsalted butter. Melted.

Stuffed Tuna Pizza

Instead topping this pizza, I stuffed it !
Pizza variations can be quite variety ... start the variation of 'topping' up to the variations of pizza skin / bread  .. This time I make pizza with pizza basic dough II, which I mixed with basil and thyme in its bread / skin. And other variations are tuna and cheese, not as a topping, but as 'stuffing' ... hmmm ... yummy and would soon become a new favorite in your family


Ingredients:

For stuffing / filling
- 300 g canned tuna
- Cheddar cheese (as much as you want)
- Olive oil (or other vegetable oil) to spread

Pizza basic dough II

Another Pizza basic dough other than I posted before. This time I add and combine dried basil and thyme in the dough, and also a little different on material and method. This basic dough also you can make for Stuffed Pizza

Before


Material A:
- 1 tbsp all purpose flour
- 10 g instant yeast
- 1/2 tbsp caster sugar
- 1/2 cup warm water
Material B:
- 2+ 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 1/2 cup warm water
- 1/2 tablespoon thyme
- 1/2 tablespoon basil / basil dried

Method:
1) Mix materials A until blended. Cover with plastic film or a towel, let stand about 1 hour until fluffy.
2) Mix the flour and salt (from material B). Add  ingredients A (after fluffy), knead. mix in olive oil, knead again. Add warm water gradually, knead again until smooth and not sticky (there may be additional flour at this stage).
3) Finally combine dried basil and dried thyme. Cover with plastic film or  towel and let stand 1 hour until the dough become double.
Ready to use.

Brownie CheeseCake.

Another variation of Cheese Cake. Biscuit crumbs mostly used as a base of Cheese cake. This time I want to try using chocolate Brownie as a heavy foundation of cheese cake a la  New York cheese cake . And the Brownie I copy from "Aneka resep Brownies" (Brownies recipe book) published by 'Gramedia' Indonesia.
And the result ... hmmmm ... combination of sweet chocolate brownies and soft new york cheese cake .. guaranteed will not simply  take just one piece.

Cake Wortel Kurma(Carrot Cake with dates Fruit)

Today's Cake is other than healthy-because it uses carrot as ingredient- also really simple and quick to make . Guaranteed .. children who do not like vegetables, will not realize they've been eating their carrots in cake :))
Ingredients:
- 3 medium size carrots.  coarsely Grated
- Lemon Zest of 1 lemon.
- 5 eggs
- 1  1/2 cup brown sugar
- 1  1/2 cup cooking oil (I use vegetable oil)
- 1 package (10 grams) baking powder
- 1 teaspoon baking soda
- 1 package (11 grams) vanilla powder
- 2 cups all-purpose flour
- Some dates, seeded and cut into small squares. Coat with enough flour (optional)

Method:
1) Grease a 27 cm baking pan size with margarine and sprinkle with a little flour.Set aside.
2) Mix the flour, baking soda, baking powder and vanilla powder. Set aside
3) Using a whisk, beat eggs and brown sugar until sugar dissolves. Put vegetable oil. Stir until well blended and mixed.
4) Slowly add the flour mixture while stirring. Mix until completely blended.
5) Add grated carrots, lemon Zest and dates. Stir again until mixed perfectly.
6) Pour into baking pan and bake at 170 deg C oven about 45 minutes (Test with a toothpick. If the toothpick comes out clean means the cake is cooked)
Note: Know the condition of your oven. Different size and condition will give different  heat result.

Fırın Patlıcan Kebabı / Turkish food-Roasted eggplant kebab recipe

Selam Everybody...Merhaba from Turkey.

There are so many variations of kebab in Turkey, other than "Kırmızı Biber siş Kebab" which I'd been  posted previously, there are many other types of kebab which are being everybody's favorite here. This time I try to make "Fırın Patlıcan Kebabı" or Roasted eggplant Kebab. Compared with Kebab from "Usta" (the expert) or cuisine locally here, really my cooking is nothing ... But as long as my husband said "Cok Güzel Olmus" less or more means "really nice" ... yeeaa I'm still confident  featuring Turkish cuisine creations from my mixed-culture kitchen :)


Ingredients:
  • 3 medium sized eggplants. Peel the skin lengthwise like a zebra pattern. Cut out a circular 2 ~ 3 cm thick. Soak in salt water for some time. Wash
  • 3 medium size tomatoes. Cut a circle 1 cm thick
  • 3 ~ 4 Chili Carliston (or long green peppers). cut about 3 cm long
  • Several skewers
For the sauce:
  • 1 large size tomato. finely grated.
  • 1 tbsp tomato paste. Dissolve with 3/4 cup water.
  • Pinch of salt and sugar.
Mix together all sauce ingredients.


for Meatball:
  • 300 gr ground beef (you can mix with ground lamb)
  • 1 sheet of white bread, crumbled (I use stale bread)
  • half medium onion. Finely grated.
  • pinch of cumin powder
  • Salt and pepper to taste
Meatball Mix all ingredients and form a round flat. set aside

Ladrang Jagung (Indonesian traditional corn snack)


Indonesia has many kind traditional food and snacks. We make it from various ingredients cause we have maannyy of them.. Before I made "Onde-Onde" ... now allow me to introduce you "Ladrang jagung". It's light snack made from fresh corn. Nowdays, this snack getting rare to find unless we make it homemade.

Ingredients:
- 3 pieces medium fresh corn.  shredded
- 1 ~ 1 1 / 2 cup flour
- 100 gr butter
- 1 egg
- Chili sauce to taste (I use chili paste 1 / 2 tbsp)
- Salt and sugar according to taste.
- Enough cooking oil to fry.

Kids' Party begin with My Mini Chocolate Potato Donuts (Donat kentang coklat mini)

It's (almost) too cute to be eaten....
Just one bite or two for their small cutey mouth :)
So colorful, sweet and so chocolate ! Which kid will refuse ..:))
Ingredients for Potato Doughnuts
Materials:
1 piece large size potatoes, steamed and mashed (about 250 g of potatoes)
500 g high protein flour
1 Package of instant yeast  (1 pack 10 g)
1 / 4 cup granulated sugar
4 egg yolks
50 g unsalted butter. cut into squares.
½ teaspoon salt
50 ml of water (if necessary)
Enough cooking oil to fry.

To garnish / topping:
300 g semisweet cooking chocolate.
Ready to use icing sugar to decorate.

How to make:
1) mix flour, sugar, instant yeast, mix well.
2) To flour mixture, add mashed potato and egg yolks, knead until blended and half smooth.
3) Add the unsalted butter and salt, continue to knead until smooth. Let stand 50 ~ 60 minutes.
4) roll the dough with a rolling pin and cut (formed) according to taste. Let stand another 30 minutes.
5) Fry over medium heat till golden brown. Remove and drain.
6) Garnish with chocolate and icing sugar after cool.

Vegetable Spring roll with sweet chili dipping sauce / Lumpia sayuran

I love vegetables much!.. so I always try to make variation of vegetable dishes in my small kitchen .. Now, made simple and quick one.. spring roll vegetables.. but the taste I think it's not simple :)




Ingredients:
- 2 sheets phyllo dough (or can use spring roll skin 18 ~ 20 pieces)
- 2 cups bean sprouts
- 2 medium carrots. Cut into matchsticks or roughly shredded .
- 1 cup sweet corn.
- 5 ~ 6 pieces of cabbage. Thinly sliced
- 1 medium sized turnip. Cut into matchsticks or roughly shredded.
- 1 medium shallot. Chop roughly.
- 3 cloves garlic, bruised, finely chopped.
- Salt, sugar and pepper to taste
- 1 teaspoon ground ginger.
- 1 tablespoon soy sauce
- Enough Cooking oil for frying

Sweet Chili dipping sauce

Can be used for dipping sauce of Lemon sauce honey chicken wings, vegetable spring roll, Chicken fried corn flour, and other

Ingredients and how to make:
- 1 tablespoon chili paste (chili sauce)
- 1 tablespoon soy sauce
- A little salt and sugar
- 1 / 2 cup water
Cook over low heat all ingredients to boil

Dipping sauce ready to serve

Safranlı Pilav (Turkish saffron rice)

Another kind of pilaf from Turkish kitchen. As it's name Saffron Pilaf, this rice has yellow color due to cooked with saffron water. Method to make this pilaf is almost same like making other Turkish pilav. Served hot (warm) with any kind of meat or chicken or can be with some stir fry vegetable mix. 

Today I serve Safranlı Pilav with Lemon Honey chicken wing on my dinning table for family.. Let's prepare some igredients if you wanna try it also..

Lemon Honey Chicken Wings


I believe, this dish will certainly be a favorite. The combination of the sour taste of lemon, and sweet-savory of honey and garlic, will make everyone not enough just to eat one or two pieces only. More delicious again served with chilly sauce or tomato sauce..hmmm..just Yummy!

 Ingredients and how to make it:
- 12 pieces of chicken wings.
Mix all marinade ingredients:
- 2 tablespoons pure honey
- 2 tablespoons lemon juice
- 4 cloves of garlic. Bruised and finely chopped
- 1 teaspoon salt or to taste



Marinate the chicken wings with spices. The longer the better (I soak about 2 hours). Then Roast in oven 170 deg C for 40 minutes or until cooked. Or if you can make a grill / BBQ , this can be also be roasted over coals ....
Serve hot (warm)

Stuffed Red Bell Pepper

My Simply stuffed Red bell pepper. End of the week, I didn't go to market yet for weekly shopping. 
I just got 2 pieces of red bell pepper in my refrig and some small amount of materials... What can I do with it? Well ....why don't cook it with meat stuffing ..... and vooaalllaa..! Check out the recipe if you wanna try as well :) 

Ingredients:
- 2 large red bell pepper. Make a hole at the top and discard seeds.


Stuffing Material:
- 100 ground beef
- 1 tablespoons white rice (cooked)
- 1 medium size onion. Chop very fine.
- 1 clove garlic. very finely chopped
- 1 small size tomato. Diced.
- 3 ~ 4 stems parsley. Mince
- 2 tablespoons olive oil. (Plus 2 tablespoons to rub in paprika before roasted)
- 1 / 2 tbsp tomato paste
- Salt and pepper to taste

Yumurtalı Patetes (Fried Eggs with potato)

Quick and easy breakfast I made this morning. Eat with warm homemade bread and hot tea.... hmm....chill weather outside, warm inside my stomach @(^_^)@

What you need is just:
- 1 small potato. peel, cut cubes.
- 2 large eggs. Beaten.
- salt to taste
- 3 tbsp olive oil.
- Red pepper flake for sprinkle.

How to make:
1) Heat olive oil in pan, Put potato and fry until done.
2) Add egg and continue stir, sprinkle salt to taste.  Turn off the heat.
3) Sprinkle with red pepper flake and serve it right away.

Onde Onde / Indonesian fried glutinous dumpling



Indonesia is rich in diversity of traditional food. Start from Tuber-based, soy, all kinds of flour, until the food based from Indonesia's vast ocean.
Feels proud to have such a diversity of taste and incomparable culinary wealth.
One is  "Onde-Onde" ( funny name, isn't it? ..). My favorite snack from my childhood. Onde-onde made of glutinous rice flour, shaped round like small balls containing sweet mashed mung beans and covered with sesame seeds.


And being far from home makes me want a little nostalgic, slightly reducing the homeland missing I make them on my small kitchen ... while my glutinous rice flour supplies from Indonesia are still there.

Gül Böreğı (Turkish "Rose" pastry)


Gül=Rose Böreğı= (Turkish) pastry. If you look at the picture below, I think you already have an idea why this meal named "Gül Böreğı"
Mostly use cheese as filling combine with dill or parsley, sometime mix with ground meat as well.





Ingredients:
- 5 pieces of "yufka" / phyllo dough (width and has circle shaped)
- 2 eggs
- 1 tablespoon plain yogurt
- 1 cup whole milk
- 1 / 2 cup olive oil
- Enough Feta cheese
- Enough Parsley or dill, chopped

Chicken Eggroll (served with Salad sauce mayonnaise)

Sometimes we Bored with the existing chicken menu .. So why don't we Try this chicken Variations,  guarantee, preferably by whole family member. Moreover served with Mayonese sauce salad. Serve warm with hot rice ... Just perfect dinner/ lunch :)

Ingredient I (for filling):
- 400 gr boneless chicken meat . finely minced or mashed.
- 4 cloves of garlic. Puree.
- 1 tsp pepper powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1  1/2 tablespoons sweet soy sauce
- 1 tablespoon salty soy sauce
- 2 tablespoons cornstarch
- 1 egg.


İngredients II:
- 4 eggs
- 1 / 4 teaspoon salt
- 4 tablespoons flour, mix with few Tbsp water
- 2 tablespoons melted margarine or olive oil (vegetable oil)





How to make:
1) Mix all the ingredients I (for filling). Stir until blended. Set aside.
2) Mix and stir until homogeneous material II using a whisk.
3) Take non-stick pan. Make pancakes from the batter II (make for about 4 pieces of omelet)
4) Take 1 omelette, give filling mixture, spread all over omelet's surface, stacking with a second, give the filling mixture again, spread all over omelet's surface. and Roll. Make two rolls of the same way.
5) Steam for 15 ~ 20 minutes
6) Cut the omelet rolls about 2 or 3 cm thick. Fry until golden redness.

- 2 large-size potatoes, skin on. Boiled or baked (I steamed it)to cook.
