There is also "bazlama" which is famous from Ankara. It's a single-layered, flat, circular, and leavened bread with a creamy yellow color, found in Turkey. It has an average thickness of 2 cm and diameters ranging from 10 to 25 cm, cook over pan instead of baking in the oven.
I will share this "bazlama" bread next time.
Gömeç ekmek (gömeç bread) also call "breakfast break (kahvaltı ekmeği), a specialty from Konya Province. It's a flatbread similar to ramazan pide (but different). Traditionally made by a group of women and bake in the public stone oven similar to the tandoori oven.

In Indonesia it is called nastar which is the contraction of nanas tart (Ananas or pineapple tart).
Most of nastar in Indonesia have a round shape with a diameter of about 2 centimeters. The pineapple jam is filled inside instead of spread on top. The cookie is often decorated with small pieces of cloves or raisins on top of it.

The Eid el Fitr will come soon... After fasting one full month, Muslims around the world will celebrate the Eid-el Fitr holiday.
Different from Turkey, Indonesian bake many kinds of cookies instead of Baklava. Cookie jars arrange on the table waiting for family, friends, relatives, and neighbors to come.
But this year would be sadly different 😢
There won't be a family gathering due to the worldwide pandemic COVID-19. Gathering or meeting restrictions made to cut the spread of the virus.
Generally, the case in Turkey per 21 May showed positive grafik. The case getting low and lower daily. Per May, Turkey confirmed a total of 149,435 coronavirus cases as of Sunday. 109,962 of them have fully recovered while the death toll stands at 4,140.
Turkey has been one of the countries detecting COVID-19 cases the most rapidly and it took an important step by starting treatment at an early stage, the nation’s health minister told Monday the World Health Assembly (WHA).
"It is among the best-performing countries in terms of mortality rate and burden on the health care system. Thanks to the measures taken, Turkey was able to delay the arrival of the virus for three months and used this time to prepare its hospitals and health care system for the outbreak," Fahrettin Koca said.
He noted that the occupancy rate in Turkey's hospitals is still below 40% and below 60% in intensive care units.
"Turkey is one of the few countries providing all services to its citizens free of charge under universal health coverage. Ramadan pide, is one of the Ramadan staples here in Turkey. It's a traditional soft-leavened Turkish bread. Round or oval and rather flat in form, and having a weave-like patterned crust, Ramazan pidesi is made of wheat flour with yeast and topped with egg glaze and sesame and or nigella sativa seeds.
It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.
With Ramadan starting, everyone is waiting for the moment they get a hot Ramadan pide for iftar (fast-breaking meal) and put butter on it or dip into a hot soup (çorba). Enjoying the enchanting smell before eating the whole piece in a second.
And seeing a long queue in front of fırın/ public bakery before iftar time to get this delicious flatbread fresh from the oven is a common view. But since the COVID-19 pandemic, people hesitate to go out and no crowd being allowed.
Most public bakery already produces this pide bread before 6 PM and are already wrapped up waiting for people to buy or they will distribute to the neighborhood.
Baking bread at home has also become more popular these days. During the pandemic, people tend to cook or make anything at home including baking bread.
But for me, baking bread it's not about a trend. I love baking my own bread cause my husband loves to eat homemade bread.

We are enjoying the month Ramadan in Muslim world right now. So, we are cooking and baking Ramadan recipes at home. For Turkish, the dinner table (iftar safrası) in Ramadan should always be special. More special than the daily table.
We start the iftar dinner with hurma (date) as our sunnah. Then soup ( turkçe; çorba) as our appetizer. Then we will have an entreé complete with salad as a side dish. Then dessert (tatlı) is served most probably a few minutes after iftar (break the fast) together with tea time sometimes.
Since we had our iftar (break the fasting) full flavors, we serve them in small portions or as a personal preference. And we want our dessert is light.
Just like what I am going to share today. It's a light, creamy yet delish Turkish milk pudding called süt helvası. Süt in Turkish means milk. Helvası from the word "helva" means halvah or sweet/ dessert. This dessert is famous from Bursa, the city I!m living in now.
This dessert is one of a repeatable menu in my house, I made this many times since it's my husband's fave. You can check my previous Süt Helvası here.

Today I will share our favorite, it calls Beğendili Köfte. Köfte is a traditional Turkish meatball (kofta) made from mincemeat mix with "baharat" or spices. The meat is used commonly beef or lamb or mixes both of them. Köfte is very popular here and everybody's favorite.
Beğendili from the word beğendil, it's an ember-roasted aubergine, finely minced then mixed in a creamy cheesy sauce similar to the bechamel sauce. This dish it's not only widely popular as a restaurant meal but also homemade versions are rich and served at home.

Similar to a Pasty, Karipap is another hugely popular snack in South East Asia. In Indonesia, it is called Pastel with its own twists. It is a snack of Southeast Asian origin. It is a small pie consisting of curry with chicken and potatoes in a deep-fried or baked pastry shell. The curry is quite thick to prevent it from oozing out of the snack.
Karipap Ayam is one of the most popular street snacks across South East Asia. They are truly delicious snacks. Crisp flaky pastry shells filled with a mild chicken and vegetables (potato and carrot mostly) curry.

Roti canai (pronunciation tʃanai) or roti cane (pronunciation tʃane) is a type of Indian-influenced flatbread found in Malaysia, Indonesia, and Singapore. It is often sold in Mamak stalls in Malaysia; also in Malay, Minangkabau and Aceh restaurants in Indonesia. It is known as roti prata in Southern Malaysia and Singapore and is similar to the Indian Kerala porotta. It is also found throughout Thailand, where it is called "Ro Tee" and is typically sold by Muslims, most often with street carts, and is usually Halal.
In English and in Chinese, roti canai is sometimes referred to as "flying bread" (飞饼 fēibǐng), a term that evokes the process of tossing and spinning by which it is made. In Chinese, Roti canai is originally called 印度煎饼 "yìn dù jiān bǐng", which means Indian pancake.
Traditionally roti canai is served with dhal (lentil curry) or any type of curries, such as mutton or chicken curry. However, the versatility of roti canai as the staple lends itself to many variations, either savory or sweet, with a variety of toppings and fillings, which includes eggs, banana, sardines, and onion. In Thailand, it is usually served sweet - typical fillings include condensed milk, peanut butter, jam, and nutella, without the curry.
Roti canai commonly is consumed with curries, as a dipping sauce or poured upon the roti. Variations of curries include lentil, vegetables, mutton, beef to chicken curry. However, as a staple food, the versatility of roti canai has enabled the cook to create some new recipes and derivatives with variations of toppings and fillings, either savory or sweet. One of the characteristics of roti canai and its derivatives is that it can be eaten with the hands, without the need for utensils. This makes it a convenient dish to consume while being filling. This characteristic makes it a dish of choice as breakfast or as late-night supper.
In Indonesia, roti canai is often called as "roti cane", "roti konde" or "roti maryam". and usually served with Kari Kambing (mutton curry). It is derived from Indian cuisine and came into Indonesia via the influx of Muslim Indian migration to Aceh Sultanate in Northern parts of Sumatra circa 17th century, and later to the rest of Dutch East Indies in early 19th century. Roti canai is more prevalent in Sumatra, especially in Aceh, North and West Sumatra. Roti cane has been adopted within Malay cuisine of Sumatra, Aceh cuisine, and Minangkabau cuisine. Consequently, there are Malay, Aceh, and Minangkabau restaurants that serve roti canai with mutton curry in Indonesia that are operated by ethnic groups other than Indians. This Indian-origin dish has been well-integrated into Aceh cuisine that it has been considered as theirs.

In Indonesian we call it "Kembang Goyang", its traditional snack from Indonesia.
Resep masakan Turki; Göçmen Böreği
Kali ini saya ingin bagikan lagi satu makanan khas Türki, namanya dızmana (bacanya; dezmana, "e" nya sprti kata beras).
Dızmana ini konon banyak dibuat oleh imigrant suku Trakya di Bulgaria yang datang ke Turki. Maka itu banyak yang menyebutnya göçmen böreği. Dalam bhs Türki göçmen berarti imigran, börek/ böreği artinya pastry.
Tapi ada juga yang menyebutnya dizman atau dıclama.
Walaupun disebut börek/ pastry, makanan ini tidak seperti umumnya pastry di Turki pada umumnya yang terbuat dari adonan phyllo yang berlapis-lapis. Bukan pula dari jenis puff pastry dan semacamnya.
Dızmana berteksture mirip roti empuk dengan siraman saus yogurt+telur yang biasa dibuat untuk saus turkish börek pada umumnya. Mungkin karena itulah makanan ini disebut börek juga.
Jika ingin tahu aneka börek khas Turki lainnya, bisa dilihat di kategori "Börekler" .
Göçmen böreği ini bisa dibuat dengan isian, biasanya keju putih, kentang yang dihaluskan atau yang lainnya. Tapi sering juga dibuat tanpa isian (plain) dan tak kalah enaknya.... apalagi dinikmati ketika hangat di saat sarapan atau brunch (sarapan kesiangan 😏)
