The combination of geographic and cultural diversity in Indonesia has resulted in one of the most unique cuisines in the world. In addition, Indonesia is rich in spices and herbs.
Foods vary from one region to another. The food from the east is really different from west Indonesia. Sumatran cuisine, for example, often features Middle Eastern and Indian influences, such as the use of curry spices in meat and vegetable dishes, while Javanese cuisine evolves from indigenous Indonesian cooking techniques.











Just like what I am going to share today. "Pecak ikan" is a dish made from fried/grilled fish (any kind of fish) then flush with "pecak" spicy dressing. The spices used for "pecak" dressing are very typical of Javanese food.
This dish easily can be found in West Java, Jakarta, and regions surrounding it like Cirebon town, Tasikmalaya, or even Tegal town.

Bulan November begini hawa sudah makin dingin ya... Ditambah berangin dan hujan, jadi makin menggigit. Musim dingin memang mulai menjelang. Yang di Indonesia juga sedang musim hujan ya.

Di musim pandemi macam sekarang, stamina juga harus dobel. Jaga kesehatan sebab selain pandemi covid-19 yang belum berakhir juga akhir 2021 ini, musim seperti ini tubuh kita rentan terserang penyakit musiman seperti batuk dan influenza.

Banyak konsumsi makanan bergizi, vitamin tambahan dan jangan stres-ini yang penting.Selalu berdo'a kepada Allah wazalla memohon kesehatan dan perlindungan dari segala penyakit.

Oh iya, saya ingin bagikan satu kebiasaan saya selama setahun ini, yaitu minum air lemon hangat 1 gelas di pagi hari sebelum minum/ makan apapun. Sebelumnya saya tidak mempunyai keluhan kesehatan apa-apa sih (الحمد لله)-- tapi saya selalu konsumsi air lemon hangat ini tiap bangun tidur. Menurut beberapa sumber meminum air lemon hangat mempunyai beberapa manfaat kesehatan bagi tubuh kita, diantaranya;
  • Menurunkan berat badan
  • Mencegah sembelit
  • Mencegah batu ginjal
  • meningkatkan daya tahan tubuh

Tapi jika kamu mempunyai keluhan tubuh yang ragu untuk meminum air lemon ini, memang harus dikonsultasikan ke dokter dulu ya.

We call it "singkong" or "ubi kayu" in the Indonesian language.
Cassava or another name is yuca. It is long and tapered, with a firm, homogeneous flesh encased in a detachable rind, about 1 mm thick, rough and brown on the outside. Commercial cultivars can be 5 to 10 centimeters (2 to 4 inches) in diameter at the top, and around 15 to 30 cm (6 to 12 in) long. A woody vascular bundle runs along the root's axis. 

The flesh can be chalk-white or yellowish. Cassava roots are very rich in starch and contain small amounts of calcium (16 mg/100 g), phosphorus (27 mg/100 g), and vitamin C (20.6 mg/100 g).

However, they are poor in protein and other nutrients. In contrast, cassava leaves are a good source of protein (rich in lysine), but deficient in the amino acid methionine and possibly tryptophan.

Known as sate in Indonesian (and pronounced similar to the English), Indonesia is the home of satay, and satay is a widely renowned dish in almost all regions of Indonesia and is considered the national dish and one of Indonesia's best dishes. 
Satays, in particular, are a staple in Indonesian cuisine, served everywhere from street carts to fine dining establishments, as well as in homes and at public gatherings. As a result, many variations have been developed throughout the Indonesian Archipelago.

Indonesia has the richest variations of satay in the world. The satay variants in Indonesia usually named after the region it originated, the meats, parts, or ingredients its uses, also might be named after the process or method of cooking.

Just like what I am going to share today, it calls " Sate Padang". Padang is the capital city of West Sumatra province, so obviously where the name of this dish came from.

Nasi kuning (Indonesian for: "yellow rice"), or sometimes called nasi kunyit (Indonesian for: "turmeric rice"), is an Indonesian fragrant rice dish cooked with coconut milk and turmeric hence the name nasi kuning (yellow rice).

In Indonesian culture, nasi kuning has favourable symbolic meanings. The yellow-coloured rice is perceived to look like a pile of gold,so it is often served in festive occasions; including parties, housewarmings, welcoming guests and opening ceremonies – as a symbol of good fortune, prosperity, wealth and dignity.

Nasi kuning is quite widespread and commonly found in Indonesian culture. It can be found from Java to Sumatra, Bali and Sulawesi. However, it is most strongly associated with Javanese and Minahasa traditions. In Java, nasi kuning might come in the form of a cone called a tumpeng and is usually eaten during special events. The top of the tumpeng is customarily given to the most senior person in attendance. One of the most popular nasi kuning variants comes from Manado in North Sulawesi, which employs cakalang (skipjack tuna).

The rice is cooked in coconut milk, turmeric, lemongrass, and kaffir lime leaves. The lemongrass and kaffir lime leaves give the rice a nice aroma and flavor.

In today's post, I will share with you how to make this authentic and flavorful yellow rice. Traditional turmeric rice always uses glutinous rice mixed with rice so it has a slightly sticky texture which very ideal to make "nasi tumpeng" / cone-shaped rice.
Making this aromatic turmeric rice actually very simple. All you need is a steamer basket and pot because the process to cook this is only a steaming process.

Indonesian call this "bolu kering" means dry cake. "Dry" because the texture indeed dry outside, almost like a cookie.
And this vintage cake has been around for a long time. From several sources, this "Bolu" cake was very popular in the 1960s. The cake has various forms, some are fish, oval, or flower-shaped, and mostly has mini size.

The texture of this cake is a bit rough, a bit dry outside but moist inside. But it's super tasty and has a very distinctive aroma. Its light taste and small shape make it perfect for snacking.

Traditionally this mini cake consists of only 3 ingredients; eggs, sugar, and flour. Old recipes require emulsifiers too and for adding the aroma we use vanilla extract/ essence. 
The process also simple, just whisk the eggs and sugar until stiff then adding flour.
But today I will not share the traditional version.

It's one of the traditional Indo-Dutch delicacies. This cake is very popular in Indonesia which is rich in spice sources.
This cake has many names. In the south of the Netherlands, it is called "peperkoek" (or gingerbread); in the West, it is called snijkoek, and in the North, they have something similar called Oudewijvenkoek-which is lighter. People also called "Kruidkoek" or spice cake.

In Netherland, ontbijtkoek is traditionally served at breakfast with a thick layer of butter on top, as a replacement for bread, however, due to its sweet taste it is also served as a snack. It is best eaten the day after it is baked. Ontbijtkoek is also found in Indonesia due to its historical colonial ties with The Netherlands.

Soto is a very common Indonesian food. It is a traditional soup in a thin but well-seasoned broth. In Indonesia soto also one of many street foods around. Even it also cooked at home but the taste and flavor of the street food version still make people keep looking for it.

Soto can be prepared with chicken or beef and some mix with offal, along with vegetables.
In Indonesia, you can find many kinds of "Soto" represents their local heritages and they vary from one another. 
Jakarta, which is the home for Betawi people, has their own “Soto Betawi” with its sweet, creamy, coconut-milk base. Some regions also have Soto Ceker, a chicken foot soto which is usually offered as a variation of the usual Soto Ayam. 

Using a cow’s or goat’s tripe in soto also very popular in many regions. Like Soto Madura (from Madura island) also use tripe (or offal). Soto Betawi (from Jakarta) also use offal served in yellow spicy coconut milk soup with vermicelli, potato, and vegetables.

Soto Tangkar, a Soto made of chopped goat or beef ribs and beef brisket cooked in coconut milk soup with various Indonesian herbs and spices.

AYAM BAKAR TALIWANG / INDONESIAN SPICY GRILLED CHICKEN FROM LOMBOK | Çitra's Home Diary

The diversity in Indonesia has led to a rich culinary heritage. From the famous Satay to Indonesian salad gado-gado, every Indonesian food is really worth to try. Just like this "Ayam Taliwang"

Ayam Taliwang is made with chicken (preferably free-range), which is grilled previously. Once it has been grilled halfway, then it marinates and tenderizes with a spice paste. Then it grilled until cook trough.

Although Ayam Taliwang is said to be a dish favored by Sasak nobility, Abdul Hamid claims to have invented the dish in 1970. It is named after Karang Taliwang in Mataram, the capital of Lombok.

Ayam Taliwang is a grilled chicken with spicy savory with distinguished taste from one key ingredient; Kencur root or sand ginger.
Known as Kaempferia galanga, kencur is a plant in the ginger family that is found primarily in open areas in Indonesia, southern China, Taiwan, and Cambodia. At a glance, the rhizome (root) of Kencur resembles ginger appearance but has a different, distinctive flavor. It has a strong taste with a pungent after taste.
This herb root commonly used in many Indonesian foods, especially Balinese and Javanese foods.
You can find in Asian market or Indonesian market at your local.

The cultural diversity in Indonesia makes Indonesian cuisine has the most unique and rich in the world. 
Meals are generally simple, the plentiful use of various roots, spices, grasses, and leaves adds zest to most dishes. The common use of the chili pepper may mislead some to believe that all Indonesian dishes are spicy and hot. But actually not really true. Most of our meals have relatively mild spices and tastes. 
In addition, most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.

And today I will share one of vegetarian food that fresh yet flavorful; Plecing kangkung



Try my another vegetarian side dish: Indonesian mix vegetables cook in coconut milk



Plecing kangkung is an Indonesian spicy water spinach dish from Lombok island. Plecing kangkung made from blanched kangkung leaf (water spinach) served cold with fresh plecing sambal relish made from ground red chili pepper, shallots, and bird's eye chili.

As a side dish for Lombok Ayam taliwang dish, plecing kangkung usually also served with additional vegetables such as bean sprouts, string beans, fried peanuts and urap's grated spicy coconut dressing. Outside Lombok island, plecing kangkung is also commonly served in neighboring island Bali.

Summer still in the air, and I am still looking for a way to beat the heat with something fresh and icy.
I remember back when I was in my homeland, Indonesia, we love to enjoy fresh young coconut water right from the fruit. It was so refreshing sweet. And we can scoop the coconut flesh after finish the water. 

Young coconut flesh is so white- almost transparent. Soft-jelly like and very light sweet in taste. The older coconut, the flesh will become thicker and harder and we can make coconut milk from an old coconut. The older coconut, the more coconut milk we can get.
The water is sweet but not like sugary sweet. The older coconut, the slightly tangi the water will be and getting less.
In bahasa Indonesia, coconut we call it "kelapa". While young coconut called  "degan"

Bersedekah bukan hanya menyisihkan harta kita saja lho, Rasulallah SAW bersabda:

“SETIAP ANGGOTA BADAN MANUSIA DIWAJIBKAN BERSEDEKAH SETIAP HARINYA SELAMA MATAHARI MASIH TERBIT; KAMU MENDAMAIKAN ANTARA DUA ORANG YANG BERSELISIH ADALAH SEDEKAH; KAMU MENOLONG SESEORANG NAIK KE ATAS KENDARAANNYA ATAU MENGANGKAT BARANG BAWAANNYA KE ATAS KENDARAANNYA ADALAH SEDEKAH; SETIAP LANGKAH KAKIMU MENUJU TEMPAT SHOLAT JUGA DIHITUNG SEDEKAH; DAN MENYINGKIRKAN DURI DARI JALAN ADALAH SEDEKAH.” (HR BUKHARI DAN MUSLIM).

Begitulah cakupan luas tentang bersedekah. Jika ada yang salah mohon koreksinya ya .

Noodles are a type of food made from unleavened dough which is rolled flat and cut, stretched or extruded, into long strips or strings. Noodles can be refrigerated for short-term storage or dried and stored for future use. Noodles are usually cooked in boiling water, sometimes with cooking oil or salt added

Generally, noodles made from wheat flour and water. Salt is sometimes added, and cornstarch is sprinkled on fresh noodles to keep them from sticking together. Egg noodles or dan mian, occasionally flavored with shrimp and yellowish in color, are popular in southern China.
Other types of noodles made with rice flour (cellophane noodles/ vermicelli) or mung bean flour (glass noodles). Soba noodles made from buckwheat flour, wheat flour, and water.

Tiap kondisi orang juga macam-macam ya. Ada yang sudah tinggal puluhan tahun di negeri pemakan pokok non beras, tapi tetap kalau gak makan nasi katanya gak makan. Hal begitu juga wajar saja karena mungkin kondisi dia berbeda. Kan ada tuh, satu keluarga berasal dari Indonesia (negara Asia) tapi tinggal di negara pemakan roti-misalnya..tentu saja susah karena seluruh anggota keluarga pemakan nasi 😃
Ada juga yang memang susah kalau tidak makan nasi walau seluruh keluarga dan lingkungan pemakan pokok non beras... Ada, balik ke pribadi masing-masing ya.

Sudah lebih dari 10 tahun tinggal di Turki, selera saya sudah mulai bisa beradaptasi. Cuman makan roti seharian dengan masakan khas sini sudah biasa. Pokoknya kalau perut sudah kenyang, ya udah, mau roti, kentang, pasta atau gandum, ya udah gak perlu makan nasi kalau tak ada 😊
Adaptasi memang kan salah satu kemampuan dari manusia ya.. bisa menyesuaikan diri dengan lingkungan tinggal kita. Beras sebagai makanan pokok orang Indonesia tergolong mahal disini. Jadi saya mau gak mau juga kudu menyesuaikan dengan kondisi semacam itu. Walau memang kadang sesekali pengen juga makan nasi dengan lauk khas kampung halaman.

Naahh...seperti beberapa hari yang lalu, pas bongkar-bongkar kulkas, ketemu petis yang saya simpan udah lama. Mumpung masih bagus akhirnya saya masak aja

In Indonesia mostly we make or buy snacks to enjoy during iftar, we call it Ta'jil (read; taqjeel)Ta'jil itself comes from Arabic language means to fast-breaking, so it has nothing to do with the food. But in Indonesia, the term ta'jil is becoming commonly used as an expression of usually sweet iftar appetizers. Prophet Muhammad s.a.w gave the example of eating dates as the beginning of iftar.

And today I will share another Indonesian traditional kue ( snack ) call "pukis".  
Kue is an Indonesian bite-sized snack or dessert food. Kue is a fairly broad term in Indonesian to describe a wide variety of snacks; cakes, cookies, fritters, pies, scones, and patisserie. Kue is made from a variety of ingredients in various forms, some are steamed, fried, or baked. Kue are popular snacks in Indonesia, which has the largest variety of kue.

Pukis is made from yeast mixture, egg, sugar, flour, and coconut milk. The mixture then poured into a half-moon mold and baked over a fire stove (not an oven). The traditional way, it's cooked over charcoal.
